Amy’s Kroger Menu 11/8

Here are some great menu ideas for items on sale at Kroger this week (and some that you might have grabbed last week).

Breaded Buffalo Chicken Sandwiches
Uses Boneless Breasts and Hot Sauce

Slow-Cooker Cheeseburger Soup
Ground Beef, Carrots, Onions, Cheddar Cheese

Stuffed Bell Peppers
Using Ground Beef, Bell Peppers and Onions
(this makes a boat load of peppers)
6 large green peppers
1 large onion, diced
2 ribs celery, diced
3 cloves garlic, minced
2 tbsp olive oil
1 1/2 lb. lean ground beef
1 35 oz. can whole tomatoes, drained and chopped
1/4 cup parsley, minced
2 tsp. oregano
3 tsp. basil
1/4 tsp. red pepper flakes
1 tsp. worcestershire
1/2 lb. sharp cheddar, cut into 1/2 inch cubes

Halve peppers lengthwise; remove seeds and membrane.  Blanch in boiling water for 2 minutes (I think you could roast them as another option); drain.  In a large skillet, saute onion, celery, and garlic 5 minutes.  Add beef and brown, stir in remaining ingredients.  Fill peppers, place on oiled cookie sheet; bake 30 minutes at 350 degrees.

    Keep it up, Amy. I’m cheering you on. LOVED your cake pics! Very cool! Your friends are fortunate to have you as their special baker.

    After looking at your creations, I added “Find out how to make marshmallow fondant” to my To Do List. About 18 years ago I burned out the motor on my faithful KitchenAid mixture by trying to cheat and let it knead the fondant I was making to use for the centers of the kiddo’s ‘big’ chocolate covered Easter eggs. I’d prefer not repeat that with the replacement motor. ;-)
