I got this recipe from Paula Deen’s Quick and Easy Meals. It was a special issue magazine in 2008.
1 lb. ground chuck
1 cup sliced fresh mushrooms
2 carrots, thinly sliced
1/2 cup chopped onion
1 (14 oz.) can beef broth
1 (.88 oz.) package brown gravy mix
2 TBS Worcestershire sauce
1 TBS minced fresh parsley
4 large baking potatoes, baked
1/4 cup sour cream
1/4 cup butter
1/2 tsp. salt
1/4 tsp. ground black pepper
Garnish: chopped fresh parsley
1. In a large skillet, combine ground chuck, mushrooms, carrots, and onion.  Cook, over medium-high heat, until beef is browned and crumbles; drain well.  Stir in broth, gravy mix, Worcestershire, and parsley.  Bring to a boil over medium-high heat; reduce heat, and simmer 15 minutes.
2. Cut off top one-third of potatoes; scoop out potato pulp into a large bowl, leaving shells intact.  Add sour  cream, butter, salt, and pepper to potato pulp, stirring to combine.  Spoon mixture evenly into potato shells.  Top each evenly with beef mixture.  Garnish with chopped fresh parsley, if desired.  Serve immediately.

Pork Loin Chops
Using pork loin chops, bell peppers, tomatoes:
This recipe doesn’t have a name.  It is one my mom made while we were growing up, and is one of my favorite comfort foods.
Brown 4-6 chops in small amount of oil (2 TBS).  Remove.
Add 1 can chicken broth (now this is the Campbell’s size chicken broth, that was the only kind there was when I was a kid, it is smaller than the Swanson’s broth) 1 can water and 2-3 chicken boullion cubes.  Simmer, covered, about 15 minutes.
Add 1 1/4 cups rice.  Put chops on top of rice.  Top each with bell pepper ring, onion slice, and tomato slice.
Cook on low until all liquid is absorbed.
