protein pancakes: 1 cup old fashioned rolled oats (oatmeal), 1 cup fat free cottage cheese, 6 egg whites, cinnamon and vanilla extract to taste. blend in blender, cook like regular pancakes. YUMMY! great by themselves, or with berries or bananas, or peanut butter. mmmmm your kids will love them too! my 2.5 year old son wants to make them all the time. enjoy!

My favorite healthy lunch is plain rice with mixed veggies. Sometimes I grill an unbreaded fish fillet to toss on top.

Have you ever tried hummus?

I use one can of chickpeas, reserving the liquid for later use. In a blender, I add however much liquid I want the hummus to have. We usually add garlic (to taste), salt (to taste), and sometimes 1 tsp or so of tahini, per can of chickpeas.

A Mediterranean market by us sells pita bread, fresh, on Mondays and Fridays so we like to pair it with that. =D

Whole wheat pasta is great and you can't even tell a difference when made with marinara sauce! I would love to win the bowl b/c our bowls get WAY too hot in the microwave and it would making eating soup easier.

My new favorite snack is Quaker Quakes Rice Snacks. These aren't the rice cakes we ate in the early 90s on those crazy diets. These are great! Only 60 calories per serving. I only tried them because they were free with a coupon a couple of weeks ago at Harris Teeter and now I think I'm addicted! The Apple Cinnamon are my favorite, but I also like the Creme Brulee and Kettle Corn. The True Delights variety are on sale this week 3/$5 and there's a $.75 coupon out there. I ordered 10 coupons from Coupon Clippers. I don't think they'll last me 6 weeks, though!

Salsa- I really like the different flavored ones. My favorite is Mango/Peach. Pair with Baked Tostitos.

I love slimfast chocolate chewy crisp meal bars. I eat them for breakfast and I think they taste really good.

Almond milk . . . around half the calories of skim milk but tastes like it would have a lot more!

Frozen grapes are a really good snack. It's almost like a mini popsicle but much healthier!

A healthy meal my family loves is Black Bean Enchiladas:
You need 2 cans of Black bean drained, 1 can of corn, about a 2 cups of salsa (1 cup for the bean mixture, and 1 cup for the bottom of the pan), Cumin (to taste) i use a lot, garlic powder or minced garlic (to taste), 1 pkg low fat or wheat tortillas, and 2 cups of shredded cheese.
To make: Put 1 cup of salsa, garlic, cumin, beans, and corn in a pot. Heat through. When the mixture is hot, mass some of the beans so the mixture is thick. Heat oven to 350 degrees. Spread remaining cup of salsa in the bottom of a 9 by 13 pan. Portion bean mix in the tortillas. Roll tortillas into burritos, place in pan, sprinkle cheese on top. Bake for about 20 minutes or until cheese is melted and dish is hot! The only bad part of this meal is the cheese, but there isn't a lot, in my opinion! We also sometimes make the bean mix and put it over rice that has been boiled with a pack of taco seasoning.

Mango

CoolWhip sandwiches. Spread lowfat coolwhip between two lowfat graham crackers. Wrap individualy and freeze. They help curve the icecream craving while dieting.

Chobani Greek Yogurt is so good! My favorite is pomegranate. It has whole pomegranate seeds on the bottom. One 6 oz. container is only 140 calories, 0 fat, 14 g protein. It's really delicious & super thick & creamy. YUMMY! (and no artificial sweeteners)

Take a can of Progresso Soup (any flavor works) and divide between a few ramekins. Take a can of flaky biscuits and using only one biscuit peel several layers off to place on the ramekins. Heat in toaster oven or real oven for 10 minutes at 350. It's a low-calorie meal and tastes like a “fattening” pot pie!

My favorite healthy snack is a fruit smoothie! … Take a frozen or fresh banana, a couple frozen or fresh dates, frozen or fresh blue berries, frozen or fresh strawberries, and almond or rice milk (I dont drink dairy products!)…. Blend all of the ingredients together in blender and and some ice in your blender if you used fresh fruit…. If the smoothie is not sweet enough for you, add some honey !

Stonyfield Farms Fat Free Chocolate Underground yogurt. So yummy and really tastes like chocolate. It has 180 calories, but that is much less than any other chocolate dessert, and much more nutritious.

Here's a great appetizer that's fun for parties, as healthy as you want to make it, is full of protein, and is filling:

Spread light cream cheese on a plate
top with cocktail sauce – you can make it spicey if you like
top with shredded crab

dip with any kind of cracker you like to make it healthy and save calories

You can also spread the cream cheese on a cracker, top with a dollop of cocktail sauce and put a cocktail shrimp without the tail on. I love these!

I recently discovered greek yogurt. Its really tasty and so good for you. I eat the honey flavored one for dessert-YUM! Now that theres lots of competition, I hope the price goes down!!!!

Chocolate Fake Ice cream Sandwiches-
Mix no-fat or low-fat Cool whip with a little No-fat or low-fat chocolate syrup to your taste (the more chocolate the better for me). Spread between two cholcolate graham crackers. Wrap in plastic wrap and freeze.

Ceaser Salad Pizza

We are saving money AND eating healthy these days! Thanks, Jenny! Tonight's dinner was baked sweet potatoes, fresh steamed broccoli and fresh spinach salad (my kids won't eat it cooked!) For dessert, apples with sprinkled cinnamon and raisins (just a little water over low heat stove top.) Mmmmm…it tastes like apple pie! This meal is loaded with vitamins and nutrients, has no added sugar or salt and the kids love it! The digital jumprope is very cool and we love Progresso! We use their Tomatoes with Italian Herbs to make our own healthy minestrone every week!

2 cups Choc Chips (or PB chips, or white chips, butterscotch,,,etc)

Melt choc chips in microwave proof bowl. mix with fiber one cereal. Spoon tablespoon sized “stacks” onto wax paper covered cookie sheet. Refridgerate until firm. ENJOY!!!!

I really like to snack, so that is my downfall when trying to lose weight. I like the Laughing Cow cheese with some Wheat Thins. My other go to trick is to chew gum if I have a snack attack coming on.

I love roasted broccoli! It is my new favorite snack/side!

1 bunch of fresh broccoli (the whole thing from the store), washed and cut
4-5 Tablespoons of EVOO
salt to taste

Preheat oven to 400 degrees F. Pour EVOO on the broccoli and toss. Spread out on a pan. Put in oven for about 20 minutes. SO good! I want some NOW! :)

My sister “slimmed down” a Death By Chocolate recipe that I had. She used No Pudge Brownie mix and Fat Free milk to make the pudding. It's Delicious!

Two of them really…
I sub ground turkey breast (just ground turkey is no healthier than ground beef) everywhere I can sneak it in. When Kroger puts the one pound rolls on sale I stock up. Great in tacos, chili, half and half with ground chuck for hamburgers, etc…

Second is frozen Grapes and Blueberries. When you freeze them they get extra sweet and are a great snack on a hot southern day!

raw milk – we love it.

a square or two of dark chocolate–but here's the secret, go for the gourmet brands (not the brands that also make the bad for you milk chocolate candies) that are 75-85% cocoa. They are rich enough that you don't need to eat much, but not bitter like the cheaper brands can be.

Pepperoni Chips: Buy turkey pepperoni. Line a plate with a paper towel and a single layer of pepperoni. Microwave for @ a minute until they arwe crisp, not burnt. They are crunchy, yummy and very few calories but great protien. A great, fast snack for kids too!

Steamed cauliflower with fresh grated Parmesan cheese on it.

The Yoplait Key Lime Pie yogurt that is under 100 calories. Tastes like a dessert and doesn't affect you the same!

We love to snack on frest veggies or fresh fruit! Another good snack would be granola or trail mix.

Mixed vegetable rice : Frozen veggies mixed with cooked rice with a touch of spices :) Yummy!

I like simple smoothies: apple juice, bananas, frozen strawberries and after blending add yogurt. For a family of 4, making large glasses, we put 1/2 cup juice, 4 sm to med bananas, and almost 1# frozen strawberries. Then we add the amount of yogurt to each glass that each like–it is such a pretty pink.

All natrual peanut butter is a great treat on rice cake or on apple and bannanas.

Cool Whip Light!! Fast, easy and requires no cooking. Scoop directly from the freezer and put between 2 chocolate graham crackers and yes, dilish!! Mix a container with a couple of flavored yogurts, pour it into a graham cracker crust and pop in the refrigerator until ready to serve. Yummy and good for you!!

I'm not really sure of what you're looking for here but a favorite at my house is with Breakstone's Cottage Cheese. All the recipes are written on the outside of the carton.

For Breakfast: I substitute the bagel in which it calls for with a waffle instead. Spoon on the Breakstone's, sliced bananas, and cinnamon sugar.

And for an anytime of the day snack, including a sweet side dish to go with dinner: is Breakstone's, applesauce, raisens, and cinnamon. It's a filler-upper this one is!

Progresso 100 cal. soups help keep this 49 year old grandma healthy and under 100 pounds. I work hard at staying healthy and in shape for all my marathon grocery store couponing. Last year I donated over 4K worth of food to my local food banks with a cost of my time, gas and a couple hundred dollars. It is a fun way a hobby of sorts for me to donate my time to those who need a little extra help. Have coupons will travel, I dont leave home with out them…..

Whipped cream cheese has less fat and calories than regular cream cheese. My favorite: spread it over a big portabella mushroom. Chop a green onion and a slice of ham and sprinkle it over the cream cheese and top it with a sliced roma tomato. I put it in the toaster oven just to warm and soften the mushroom. I LOVE this!

I forgot to leave my healthy food… I sure would love to win the soup, mug and jump rope…. My healthy food is every evening I air pop popcorn in my microwave (no oil or butter) spray lightly with butter pam, sprinkle with sugar free hot chocolate mix and Equal. MMMMM I also will subsitute the hot chocolate mix with Splenda Moca sticks…. It takes me about 2 hours to finish the 8 Qt bowl I make and I love every minute of it…. it is healthy and very tasty….

Surprisingly healthy…hmm…I enjoy Spirutien protien shakes for mid-day snacks. I don't use shakes to diet, per se, but if I am craving something sweet, I make these with organic milk, toss in a tsp of cod liver oil for good measure, and viola! a yummy, creamy snack that gives my body excellent nutrients, its not too expensive per serving, and it tastes great. :)

Greek Yogurt with a few cut up strawberrys and a bit of honey! Yummy and full of protein :)

Ok, so this isn't really healthy, but it keeps me from eating really unhealthy food. CINNAMON IMPERIALS! Whenever I've got the “munchies” a few of them will hit the spot! The flavor is strong enough to satisfy and they're only 60 calories for a whopping 36 pieces- which is too much for me!

Sugar Free Fudgesicles are only 40 calories and 0 fat…satisfies your chocolate craving and virtually costs you no food value if you're counting points or calories! ;)

My favorite low fat snack is Phony Eskimo Pies: Take one chocolate graham cracker and break in half. Fill with light Cool Whip and freeze. Yummy and light and really satisfies a sweet craving.

For Breakfast: Using a waffle instead of a bagel, I spoon on the Breakstone's, sliced bananas, and cinnamon sugar.

one of my family's favorite meals is Creamy Spinach and Corn Enchilada Casserole that i make in the crockpot. it's super easy and very healthy overall. the recipe calls for corn tortillas, fresh spinach, creamed corn, cheese, and enchilada sauce. we usually add leftover roasted chicken to it. it's awesome!

Italian Chicken Pasta Toss: (Pampered Salad recipe) Bow tie pasta, tomatoes, onion, zucchini, yellow or red bell pepper, chicken, olive oil, garlic, Pantry Italian Seasoning, salt and parmesan cheese. It is light but really,really good…with plenty of good for you veggies. YUMMY!

Fresh Fruit Salad!

Bear Naked Chocolate Granola… eating some now. Actually, you can't go wrong with Bear Naked… it's all good… I've had Cinnamon Apple, Banana Nut or Maple and they're beyond any other granola I've ever tasted.

I found that when I was pregnant and had gestational diabetes,I was desperate for some sweets! Well it was important to keep on a strict diet and to stay healthy. I also had to choose a heathy snack that would satisfy my cravings for sweets. I found out, I could eat sugar free chocolate cherry private selection ice cream(Kroger brand). It was very yummy, healthy , and kept me happy through out my pregnancy.Give it a try, its great!

I'm a big fan of the healthy choice microwave meals and the 100 calorie snacks.

i stick a container of fat free whip cream in the freezer, so when i feel like ice cream i can eat on that and dont feel guilty…it actaully tastes better than many real ice creams! mix that with some strawberries and its a party in your tummy!

Creamy Italian Chicken – Crockpot (EASY)
put chicken in crockpot with pack of Zesty Italian Chicken add water – cook for 6-8 Hours
Then add low-fat cream of mushroom and low-fat (or fat free) cream cheese, jar of mushrooms, mix and cook additional hour.
YUMMY and low-fat

Tortilla Shell Pizza's are a fast and yummy less calorie way to have pizza…just preheat oven to 400 degree. Place Tortilla shells in for 3 minutes…pull out place your favorite toppings on then bake 5-7 minutes and you have a delicious healthy pizza :) I use whole wheat tortilla shells.

Chick peas; black beans or white beans straight out of the can.

Also, pumpkin out of the can with cinnamon sugar sprinkled on it – serve on graham crackers.

My favorite yummy and suprisingly low calories food is my Strawberry Cheesecake dessert! I revised a recipe when I was on WW. I usually do not eat sugar free things because the sweetener leaves a bad aftertaste, but this one is great!

Get Angel Food Cake, slice and cover the bottom of a 9×13 pan. Mix two packages Sugar Free Jell-o Cheesecake Pudding (i use skim milk). Layer sliced strawberries between the cake and pudding, then again on top of pudding. Top with Cool Whip Free! It's a great summer dessert. I have taken it to parties, and people can't believe it is low calorie!

For a topping, cup up a cup or two of strawberries, add 3 teaspoons sugar and 1 teaspoon fresh lemon juice to taste.

Frosted Shreaded Wheat – great for when you want a sweet treat and all that fiber is an added bonus!

low fat peanut butter on low fat grahmn crackers. Tastes like nutter butter cookies.

I make my own guacamole by just mixing an avocado and some salsa (not as amazing as REALLY making it but works and I always have salsa on hand). Tear up some whole wheat tortillas and bake 'em until they're a little crisp to dip in the guac. The avocado has “good” fat in it and the other stuff is low-cal and SUPER yummy to munch on!

Green Giant Frozen Asian Medley. Yummy!!

One of my friends, a longtime member of a famous weight loss group, swears by meringue candy. She would buy the plastic tubs of meringue at the grocery store and enjoy them during the day for a small snack. They are so light and airy!

Fruit salad mixed with Low Fat Cool Whip.

We freeze yogurt. It gives it a popiscle like taste without the fat.

I like to make my own Chick fila chicken club sandwiches. Lite buns, precooked bacon, Tyson Grilled Chicken, provolone cheese, tomato and lettuce. I make these for my family for a fraction of the cost that you would pay at Chick fila. I have made 7 sandwiches for $8,10 which is a splurge for a meal in my family, but if we had eaten 7 sandwiches out, it would have cost me around $4.00 for each sandwich.

Peanut butter. It is so yummy, yet so good! Marshmallows too. Hardly any calories there and so good!

Progresso's Creamy Basil Tomato Soup with some shredded cheddar jack mixed in, and a hunk of 5 grain loaf from the Publix Bakery – YUM – and healthy, too!

I do like the hearty tomato soup by progresso. I recently bought it with the Italian deals at Publix. For a low cal, hearty lunch, I like to wrap a mozzarella cheese stick and a pickle spear with lunch meat. This would be a low cal “sandwich”. Could also put that in a tortilla.

I love avocados. Some people shy away from them because of the fat, but it is monounsaturated fat and good for your heart.

My husband and I make black beans in the crock pot. They are awesome by themselves, with rice and in burritos.

If you are a coffee drinker, you can add the caramel that is used for ice cream & it melts immediately. There is NO fat & it also limits the sweetner you add. I prefer Splenda b/c its not as bad as sugar & tastes just as good.

Multigrain Cheerios + Dried Cherries + Dark Chocolate Chips = YUM and healthy!!

I love Hershey 60% cacao purple pky chocolate they r individually wrapped so I don't eat to many. But they r the good dark chocolates, that are heart healthy. I get my sweet fix without feeling bad. And they aren't bitter because they have a hint of vanilla. So yummy!!!!

Dark Cocoa Almonds… healthy, tasty, and really kills the craving for sugar even though there's no sugar on them!!!

Taco Soup is my FAV!!
1 can corn
1 can rotel
1 can diced tomatoes
1 can chili beans
1 can pintos
1 pk ranch dressing mix
1 pk taco seasoning mix
1 lb lean hamburger meat
1 onion

Cook hamburnger and onion then drain. Combine all ingredients in a crockpot and cook until hot and enjoy with crackers or baked scoops!! Love it!

I love to make homemade hummus! So yummy, and healthy! Also, I would be happy if I could eat avacado every day; it's got so many good-for-you qualities, and adds a bit of flavor to tex-mex meals, salads, and snadwiches.

I love the new sandwich thins that every bread company seems to be making. Now, on my Weight Watchers diet I don't use all my points on bread! And I can use that yummy Boar's Head Maple Turkey! :)

Frozen dole fruit cups .. My twelve year old came up with this “invention”. I realized it when I opend up the freeze to about the tune of 5 frozen cups of fruit – actually makes you think that you are eating a fruite flavored freeze pop.. Thanks Chelsea :o)

Vegetable Pizza is delicious as a snack or meal. It can be made even healthier if you use the low-fat or no-fat versions of the rolls, shredded cheese, cream cheese and Miracle Whip.
Unroll and place 2 cans Crescent Rolls in bottom of cookie sheet and bake for 15 minutes.
Cool and spread a mixture of 2 packages of cream cheese (room temperature), 1/4 cup Miracle Whip and a tablespoon of dried onions. Next sprinkle about a cup of shredded cheese and press down. Add bacon bits, shredded carrots, cauliflower and broccoli (cut tops into small pieces) and press down. Cut into serving sizes and ENJOY! It is one of my family's favorites!!

If you are eating out, it is McAlister's chicken tortillo soup. It is the best and it is good for you. But in the store, find the emerald dark chocolate coated almonds. They make a great snack. Almonds and dark chocolate are both good for you, and this snack tastes wonderful as well. You cant beat a snack that tastes great and is great for you!!!

A very tasty sweet treat that I have recently gotten hooked on are Special K Chocolatey Pretzel Ceral Bars. They are very good and are only 90 calories!!! A great, healty place to eat in the atlanta area is Doc Greens. They have the best salads and in the line of coupons there is a website, Restaurants.com that has coupons that you can buy to use at restaurants. The coupons range from $10 – $100 and can be purchased for as little as .80. There are other restaurants on there as well. With the $10 coupons usually you have to spend $20 and you will get $10 off,, which for my family makes eating out more apealing than paying full price. Hope this helps!! It is not really surprising, but I love raspberries. They are sweet and tart, and are so good for you. I buy the frozen ones and and a little whipped cream to make a special treat.

My favorite “healthy” treat is defiantly homemade granola with okios yogurt. crunchy, sweet and healthy.yum!

Spinach, strawberry, walnut and feta cheese salad. yum!

I enjoy hummus, rice cakes, peanut butter, fresh fruits & veggies, yogurt, air popped popcorn, special K cereals. Also try baking any dish instead of frying, the guilt and calories are always less.

I love Progresso soup so much that I have 6 cans in my bottom file cabinet drawer at work along with a box of Nabisco Lorna Doone.

Add baby food fruits and veggies to pancakes, muffins, homemade waffles, brownies, anything that you can sneak that nutrition into! Kids will never know and in many cases it really enhances the flavor of food..

We have soup and sandwiches at least once per week in my house. It's a quick, easy, and healthy meal when we don't have a lot of time.

Surprisingly i love the 200 calorie pizzas by Digornio. I also love stouffers entre’s they are low in calories and full of taste. Not to mention extremely quick for moms on the go.

Enchilada Soup in a Crockpot

3 uncooked chicken breasts
1 can enchilada soup
1 can chicken broth
1 pack. ranch dressing seasoning
1/2 pack. taco seasoning
Juice of 1 lime
3 Tablespoons of cilantro chopped
1-2 cans black beans
1/2 bag frozen corn

Look 6-8 hours on low. Shred chicken (it will be falling apart) and allow to cook for 1 more hour. Additional toppings: Mexican cheese, sour cream, tortilla chips

I'm a chocoholic so it can be tough to get my 'fix' without a ton of calories so I like to make a bag of light popcorn in the microwave, open the bag immediately while its still hot and drop in two Andes mints. The chocolately popcorn is absolutely divine and the combination of salty and sweet is fantastic!
