Slow Cooker Chicken Fajitas

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 cup sliced onions
  • 3/4 cup low sodium chicken broth
  • 1 tbsp ground cumin
  • salt & freshly ground black pepper (to taste)
  • corn tortillas
  • optional toppings: cilantro, hot sauce, cheese, sour cream, etc.

Directions

  1. Add the first 6 ingredients (through the salt & pepper) to your slow cooker, stir, and cook on low for 4-6 hours.
  2. Remove the chicken and shred with a fork. Place it back into the slow cooker and mix everything to combine.
  3. Serve hot with tortillas and your choice of toppings.
