Celebrate Mother's Day with this blueberry muffin bars recipe!

Mother’s Day is slowly sneaking up on us (it’s May 11th!) and soon you’ll be celebrating your moms and perhaps even be celebrated! There are plenty of ways to encourage and honor the motherly figures in your life, but what’s a more fun way to celebrate than with food??

I headed to Publix® last night to look for inspiration for a recipe that would be perfect for a Mother’s Day breakfast in bed. Betty Crocker® carries lots of different mixes that would make it easy for husbands and kids to whip up something yummy and sweet. I grabbed the Blueberry Muffin mix and thought, “Mmm, muffins. But how can we spruce them up a little bit?”. I decided to throw in a few fresh blueberries, some brown sugar and butter and turn them into MUFFIN BARS.

Not only could I picture these treats sitting next to a few sausage links, a scrambled egg, and a glass of OJ while sitting in bed being celebrated on Mother’s Day, but these would also be great for normal mornings. They are quick, easy, and only require a few ingredients.

Blueberry Muffin Bars

Ingredients

1 package Betty Crocker® blueberry muffin mix, 6.5 oz
1/2 cup water
1 cup blueberries (fresh or frozen)
2 tbsp unsalted butter, melted
6 tbsp packed brown sugar
2 1/2 tbsp all-purpose flour
1/4 tsp ground cinnamon

Directions

Preheat oven to 375 degrees. Lightly grease an 8×8 baking pan.

Mix the blueberry muffin mix together with the water in a bowl until everything is just moist. Spread evenly in the prepared baking pan.

Sprinkle the blueberries evenly over the batter.

In a bowl, mix together the melted butter, brown sugar, flour, and cinnamon until crumbly and combined. Drop pieces of the mixture evenly over the blueberries.

Bake in the preheated oven for 20-24 minutes or until the batter is set and the top is golden brown.

Let cool before cutting into sqaures.
