The makers of Crisco Olive Oil are holding a contest for all home cooks of Mediterranean cuisine.

The Crisco Mediterranean Inspirations Recipe and Essay Contest invites all home cooks to send in and describe their best dishes incorporating Crisco Olive Oil.  Three winners will be chosen, and the grand prize is a trip for two to ITALY!  How awesome would that be??  You have until March 18th to enter.

The dish I entered is one of my favorites for a quick dinner that is yummy and healthy.

Ingredients:
1 lb of Boneless Skinless Chicken Breast
Crisco Olive Oil
Italian Seasoning Blend
2 Garlic cloves
Provolone Cheese

Clean off Chicken Breast of excess fat. Drizzle olive oil over meat, then sprinkle seasonings over the meat on both sides.  Arrange on a broiler pan (I like to cover my pan with tin foil and cut slits to make for easy clean up).  Broil on high for 5-7 minutes, turn chicken over and broil for another 5-7 minutes or until temperature is 160 degrees.  Top with 1/2 slice of Provolone cheese return to oven until cheese melts.

      Place six chicken leg/thigh quarters in the crock pot. Drizzle with crisco olive oil. Pour one can of fire roasted diced tomatoes over chicken. Add one bag of frozen green beans. Add one cup of jasmine or basmati rice. Add one can of water. Add seasonings to taste – I like cumin, turmeric, curry, and Mrs. Dash. Cook on high for two hours. Yum-O!

      I love saute a bit of swiss chard (maybe a cup uncooked) in olive oil. add a bit of onion or broccoli if i have it. Then, add 1 cup of pre-cooked (we call it leftovers) pasta and water to reheat pasta. Serve topped with a poached egg.

      My dish is an easy one to make in a hurry and my kids love it. I bake chicken breasts in the oven and then chop them up. I add olive oil, diced tomatoes, garlic and Italian seasoning to the chopped chicken. I serve the dish hot with shredded cheese on top.

      During the summer when the tomatoes, zucchini, basil, and onions are producing like rabbits, I saute them with garlic in Crisco Extra Virgin Olive Oil and pour over any available pasta, top with more fresh basil and parmesan cheese. Very light for the hot months in the south and buget friendly with no meat. You can even home can this for the winter months, taste fresh from the garden in the middle of winter.

      My favorite Mediterranean dish to prepare is Moussaka. It consists of layers of eggplant and potato covered in an aromatic meat sauce and topped with creamy béchamel sauce. It is wonderful. I use the olive oil to grill/bake the eggplant and potatoes and in making the meat sauce. My hubby and I had this dish on our honeymoon in Greece and I was lucky enough to find a wonderful Greek cookbook that is authentic. Every bite brings back sweet memories of our honeymoon.

      We bake garlic in olive oil in the oven. The squeeze out the softened baked garlic into the olive oil and dip crusty bread into it! YUM

    • 8 oz. plain yogurt
      1 Tablespoon lemon juice
      1/2 teaspoon dried oregano
      1/2 teaspoon dried rosemary
      1/4 teaspoon black pepper
      1 large clove garlic minced
      4 boneless skinless chicken breasts
      1/4 cup crumbled feta

      FREEZER STEP: Combine first six ingredients in a Ziploc bag add chicken and mix together; seal and freeze flat.

      TO PREPARE: Remove chicken from marinade; reserving marinade. Place chicken on rack in broiler pan coated with cooking spray. Broil 5 1/2 inches from heat 7 minutes. Turn chicken; spoon reserved marinade over chicken, and top with crumbled feta. Broil until done.

      One of my favorite salads: poke an eggplant the way you would if you were baking a potato. Wrap it in tinfoil and roast in the oven at 450 for about one hour (depending on the size of your eggplant). Take the eggplant out, let it cool off a bit and then scrape the middle of the eggplant out. Add a generous amount of olive oil, salt, pepper, onion and garlic. Give it a whirr in the blender or food processor and it's a lovely dip for bread. :)
