If you’re reading the title to this recipe and think, “My family won’t do vegetarian…”, let me tell you: these lentil tacos are so hearty and delicious, you really won’t be able to tell that they are meat-free.
And lentils are so good for you (and are really inexpensive). They have lots of protein and fiber and are low in fat. Prepare the lentils for the tacos just like you would ground beef (simmer them with taco seasoning) and then load them onto taco shells with cheese, salsa, and all of your favorite taco toppings.
