menu plansAs I mentioned last week, this time of the year can get pretty busy with school starting up, new activities beginning, and more! Crock pot meals are nice because they are not only easy, but can produce delicious and healthy results with the push a button.

You can also freeze the leftovers or prepare many of the ingredients in advance.

Crock Pots make large helpings, and a great way to make it more affordable is to pick Crock Pot recipes based on what’s on sale! Many crock pot recipes call for canned foods, but if you can find the fresh veggies in season and on sale, you can often use the fresh version for about the same price as the canned or frozen, depending on the vegetable.

      Love coconut curry chicken soup!

      saute 2 c. diced onion, 2 c sliced carrot, 3 c sliced red bell pepper in a skillet over med heat until tender. Add 4 tsp minced garlic, 1 T grated ginger, and 1 T curry pwder and cook a couple min. until fragrant.

      Meanwhile, place 3 c chopped, cooked chicken in crockpot and add 4 c chicken broth and sauteed vegetable mix. add salt to taste.

      cook 3-4 hours on low or 5-7 hours on high.

      Near the end of cooking time, add 1 can coconut milk, 2 T creamy peanut butter, 2 tsp each soy sauce and hot pepper sauce, and 1 tsp brown sugar. Cook for 15 min on high.

      Just before serving, stir in 1/4 c chopped fresh cilantro and squeeze a little lime juice over the top. Serve hot over jasmine rice.
