I have a feeling you all knew more was coming in the world of leftover meat recipes. And you were right! Several weeks ago I covered recipes for using up your leftover steak, last week we talked about leftover chicken, and this week we’re going to talk about pork.
I feel like pork itself has a very wide range of uses and flavors. You can make pork tenderloins, BLTs, and Easter Sunday ham, and it’s all pork. The good thing about all of these meats (besides being delicious) is that they can all be used in leftover recipes really well. Chop leftover bacon and throw it on a potato or salad, use pulled pork in quesadillas, or dice ham to make a casserole. In basically any recipe calling for leftover meats, you can throw in pork and it’ll add flavor and richness.
