      For every one cup of chopped chicken add: 2 Tbsp mayonnaise, 1/2 chopped apple, 1/2 celery stalk (chopped), pepper and salt to taste, and optionally add 1/4 cup chopped walnuts and 1/4 grapes (sliced in half). After mixing thoroughly, place on firm bread (if too soft, toast it). Serve as the best chicken salad sandwiches ever!

      This family of 4 stretches rotisserie chicken to 2 meals.

      For dinner we pair the chicken with fresh green beans and a box of Romano cheesy rice.

      Then I pick off all the remaining chicken and make chicken salad for lunch the next day!! (Chicken, mayo, apples, celery, craisins, toasted slivered almonds, and salt and pepper to taste). Make it the night previous and it’s delicious the next day for lunch!!!

      A holiday (romantic) meal idea using the free Publix rotisserie chicken that comes to mind is Orange Glazed Chicken using orange marmalade on top of the free rotisserie chicken, placed in a crock pot on low. Minute® Multi-Grain Medley; which has a combination of Brown Rice, Thai Red Rice, Wild Rice, and Quinoa (pronounced “KEEN-wah”) made in the microwave in 8-10 minutes. And a can of green beans rinsed to remove as much salt as possible, placed in a skillet on low with I Can’t Believe It’s Not Butter, a little garlic and a few slices of almonds. Brown the beans lightly, but don’t burn the garlic or butter. Coffee or Your favorite drink. Rootbeer floats for dessert. After dinner I’ll start the bubble bath. voilà dinner for two, bath for one :)

      Holiday Chicken Salad

      Author: Olivia’s Cuisine

      Serves: 8

      Ingredients

      1 lbs chicken, cooked and shredded (Use smoked chicken if you can find
      it!)
      1½ cup cubed ham (optional)
      2½ cups mayo
      1 7.6 fl oz can table cream
      1 15oz can corn
      1 20oz can crushed pineapple, drained
      1½ cups chopped walnuts
      1½ cups golden raisins, hydrated
      1 granny smith apple, cubed
      1 cup potato sticks
      Salt, if necessary (usually not!)

      Instructions

      1. In a large bowl, combine the chicken, the ham (if using), the corn, the pineapple, the apple, the raisins,
      the walnuts, the table cream and the mayo and mix well. Taste to check seasoning and add salt if
      necessary.

      2. Bring the bowl to the fridge and let it sit overnight.

      3. The next day, transfer to a serving dish and sprinkle the potato sticks on top. Add some chopped parsley
      and some more walnuts and raisins to decorate, if you want.

      4. Serve cold or at room temperature.

      Cheesey Chicken and Rice: Separate one Publix Rotisserie Chicken from the bone and set meat aside. In a 9×13 baking dish, mix two cups of Publix Chicken Stock with 1 cup Publix long grain rice. Add chicken. Cover and bake at 350 degrees for 20 minutes. Just before removing from oven, add 2 cups of shredded Publix Colby cheese and let melt. Remove from oven, let rest for 10 minutes. Add a salad, and you have a meal fit for a royal family.
