basic essentials pressure cooker

        Here’s my favorite pressure cooker recipe:
        2 cups cooked chicken, shredded
        4 cups chicken broth
        2 cups of rice
        Place broth and chicken in pressure cooker and heat to boiling.  Add rice and stir.  Place lid on cooker.  Continue cooking on med high heat until pressure starts releasing from top ( I call this jiggling, LOL). Remove from heat. Rice will be done when pressure indicator drops.  You can actually cook the chicken in the cooker too.  Only takes about 20 minutes for fresh chicken and makes it very easy to debone.

        I love mine, but my Mom always cooked with one. They are great for dry beans or greens…New years day. You can cook collards in 45 minutes and they are so tender. Wash, tear stems off, season, I like healthy choice so I use a drizzle of olive oil, tiny pinch of baking soda, some herbs to taste and sea salt. Put lid on and once it comes up to pressure cook for 45 minutes just make sure you have enough water say 2/3 full if you have a bunch of collards.

        Black eye peas, same as above seasoning wise, used to use ham or salted pork to season with salt and white pepper :) if they have soaked a few hours can cook in approx 20 mins in pressure cooker.

        Right now I am making boiled peanuts, my 20 yr olds fav. first time I ever tried them, soaked them in water for a few hours, washed shells off put in pressure cooker and cook for 45 mins. I tried them and only thing was some of the water absorbed in shells so now I am recooking with additional water for another 30 mins, but the ones on bottom were perfect and it takes all day in a crock pot!!  Have lots more if interested… just send me an email cindycakebox@yahoo.com Happy New Year!!
