Thankgiving Leftover Recipes

Happy Thanksgiving!  I hope you are enjoying a relaxing food & family filled day.

If you are like us, the big question you will face this week, is not what to cook but what to do with all the leftovers?!  The best way to be frugal is to not let anything go to waste. To keep it interesting, there are lots of things you can do to transform the turkey and mashed potatoes into other meals with the addition of a few ingredients.

If you accidentally cooked for an army, you can always freeze the extras for later in the year.

      Take the turkey meat and make chicken salad with it, just substitute the chicken with turkey.

      I don’t really have a “recipe,” but we always take leftover diced turkey, mashed potatoes and stuffing and make croquettes.  I flour them and saute in a little butter and serve with a bit of gravy.  I think we enjoy these more than our turkey dinner.

      My husband loves to make hot browns with leftover turkey.  You put turkey on toast with bacon on top and tomato and cheese…oh and I think gravy.  It sounds overwhelming but it’s pretty good.

      I took leftover mashed sweet potatoes and mixed them with a box of cake mix (no eggs, water, or anything). 12 – 16 oz of potatoes and one regular box of mix made the best tasting muffins I have ever had.
