Progresso recently sent me 15 cans of Progresso Soup so that I could try out their new light and 100 calorie soups.  So far we made into 3 of them, and they are quite good.  I have a slight problem getting past anything that says light or diet, assuming that it is going to just be canned water, but I was surprised.   While I don’t know that I could be the next “Jared” of Progresso I could make having a can or two a weekly habit.

      protein pancakes: 1 cup old fashioned rolled oats (oatmeal), 1 cup fat free cottage cheese, 6 egg whites, cinnamon and vanilla extract to taste. blend in blender, cook like regular pancakes. YUMMY! great by themselves, or with berries or bananas, or peanut butter. mmmmm your kids will love them too! my 2.5 year old son wants to make them all the time. enjoy!

      There is a cookbook called “Deceptively Delicious”. It uses vegetable purees in regular everday foods. Like mac-n-cheese with butternut squash puree. Soooo good! Not necessarily low fat (hee hee) but at least you are getting your veggies and I can trick my husband and daughter into eating veggies, too!

      Have you ever tried hummus?

      I use one can of chickpeas, reserving the liquid for later use. In a blender, I add however much liquid I want the hummus to have. We usually add garlic (to taste), salt (to taste), and sometimes 1 tsp or so of tahini, per can of chickpeas.

      A Mediterranean market by us sells pita bread, fresh, on Mondays and Fridays so we like to pair it with that. =D

      Whole wheat pasta is great and you can't even tell a difference when made with marinara sauce! I would love to win the bowl b/c our bowls get WAY too hot in the microwave and it would making eating soup easier.

    • Lowfat or nonfat Greek yogurt. Can't usually stand the nonfat yogurt, but when it's so rich and creamy, I can totally enjoy it. It's really high in protein compared to regular yogurt too!

      My new favorite snack is Quaker Quakes Rice Snacks. These aren't the rice cakes we ate in the early 90s on those crazy diets. These are great! Only 60 calories per serving. I only tried them because they were free with a coupon a couple of weeks ago at Harris Teeter and now I think I'm addicted! The Apple Cinnamon are my favorite, but I also like the Creme Brulee and Kettle Corn. The True Delights variety are on sale this week 3/$5 and there's a $.75 coupon out there. I ordered 10 coupons from Coupon Clippers. I don't think they'll last me 6 weeks, though!

      A healthy meal my family loves is Black Bean Enchiladas:
      You need 2 cans of Black bean drained, 1 can of corn, about a 2 cups of salsa (1 cup for the bean mixture, and 1 cup for the bottom of the pan), Cumin (to taste) i use a lot, garlic powder or minced garlic (to taste), 1 pkg low fat or wheat tortillas, and 2 cups of shredded cheese.
      To make: Put 1 cup of salsa, garlic, cumin, beans, and corn in a pot. Heat through. When the mixture is hot, mass some of the beans so the mixture is thick. Heat oven to 350 degrees. Spread remaining cup of salsa in the bottom of a 9 by 13 pan. Portion bean mix in the tortillas. Roll tortillas into burritos, place in pan, sprinkle cheese on top. Bake for about 20 minutes or until cheese is melted and dish is hot! The only bad part of this meal is the cheese, but there isn't a lot, in my opinion! We also sometimes make the bean mix and put it over rice that has been boiled with a pack of taco seasoning.

      Chobani Greek Yogurt is so good! My favorite is pomegranate. It has whole pomegranate seeds on the bottom. One 6 oz. container is only 140 calories, 0 fat, 14 g protein. It's really delicious & super thick & creamy. YUMMY! (and no artificial sweeteners)

      dark chocolate and Simply Jif peanut butter (it's lower in sugar) are a great combo! My kids love it too, so it makes a great snack for everyone! Another snack we love are multigrain crackers with cheese slices. They're best if you pop them in the oven for a few minutes to get a little toasted and soften the cheese. A perfect warm snack for a cold day!

    • Jacksonville carrots! Takes about 30 min. to prep and bake what you need to make enough to serve 4 is:
      * 4 large carrots, halved
      * 2 tablespoons honey
      * 1 tablespoon frozen apple juice concentrate, thawed
      * 3 tablespoons minced fresh parsley
      * 1/4 cup chopped toasted hazelnuts
      * 1/4 teaspoon garlic powder
      * 1/4 teaspoon ground nutmeg
      * 1/2 teaspoon salt
      * 1/4 teaspoon pepper
      * 1/4 cup olive oil or a low fat cooking oil alternative
      Then you steam the carrots in a steamer basket over 1 inch of boiling water for 7 to 10 minutes, or until tender but still firm. Chill, and grate with a large holed grater. Mix together the grated carrots, honey, apple juice concentrate, parsley, and hazelnuts. Season with garlic powder, nutmeg, salt and pepper. Heat olive oil. Fry the carrot mixture in the hot oil until heated through, not too mushy though leave some of the crispy texture. Toss in the toasted hazelnuts and viola! There's gonna be a party in those tummies tonight.
      The first time I made this recipe my household went wild even those who claimed they hated carrots loved loved loved this, plus the oil is the only fattening part about this recipe since the nuts contain healthy proteins and that's why I use olive oil, it tastes almost buttery without the fat and heaviness!

      I make my own “trail mix.” I buy fresh cherries and blueberries and dehydrate them. I then get organic chocolate chips from the health food store. I make one with the dehydrated cherries, chocolate chips, and almonds. For the dehydrated blueberries, I use the chocolate chips and walnuts. Keep in tightly sealed container and munch at will. You can freeze smaller batches too.

      Avacados!! They have so many great vitamins and minerals in them and even just a small amount keeps you feeling fuller longer. I love them by themselves with a little salt and pepper, as a spread on a wrap, or as guacamole.

      HI, another great tasting food that is really very good for you is Edamame. They are soybeans. You don't eat the shell but can boil them in or out of the shell. All they need is a little salt and you have a super healthy, low fat treat! Much better than popcorn. They are also great in salads, as a side, etc. Tip: you can get them at asian markets much cheaper than the regular grocery stores.

      I have a delicious dessert that is healthy. Its a strawberry shortcake version. You take the little dessert shells, top it with lots of yummy strawberries. Then top it with a red glaze, its a kind of gelatin and has very little calories. Let it set up and its done! Taste even better with some fat free cool whip on top of it!
      Another good dessert is strawberries with balsamic vinegar reduction and basil! Yummy! :)

    • My favorite healthy alternative to mashed potatoes is my own recipe of Mashed Cauliflower. Steam one head of cauliflower for 30 minutes. (cooked, not mushy) 1/4 cup of plain whey protein, sea salt sparingly. Not only is this used as a starch alternative but it is a veggy AND protein serving (whey protein). My husband is a potato freak and hasn't missed them in 6 years since I've used this recipe (even for holidays)

      Take a can of Progresso Soup (any flavor works) and divide between a few ramekins. Take a can of flaky biscuits and using only one biscuit peel several layers off to place on the ramekins. Heat in toaster oven or real oven for 10 minutes at 350. It's a low-calorie meal and tastes like a “fattening” pot pie!

      My favorite healthy snack is a fruit smoothie! … Take a frozen or fresh banana, a couple frozen or fresh dates, frozen or fresh blue berries, frozen or fresh strawberries, and almond or rice milk (I dont drink dairy products!)…. Blend all of the ingredients together in blender and and some ice in your blender if you used fresh fruit…. If the smoothie is not sweet enough for you, add some honey !

      Take a can of Progresso Soup and divide between a few ramekins. Then take ONE flaky biscuit and peel apart and lay on top of the ramekins to cover the soup. Bake at 350 for 10 minutes in the oven or toaster oven. This is a great swap for fattening pot pie! Also, great to make ahead of time and put in the microwave for minute. Even makes for a great after-school snack your kids will love!

      This would be great! My daughter has really been wanting a jump rope. My favorite, easy, healthy, inexpensive quick dinner that everybody will eat is bean burritos. Heat up the re-fried beans, add seasoning, shredded cheddar and sour cream on a flour tortilla!

      Have learned to enjoy hummus rather than a fat riddled dip filled with sour cream.. Since hummus is made from chick peas, it is surprisingly healthy, tricks up into thinking you are eating a dip due to its texture and tastes great!

    • While everyone is chiming in one the yogurt.. since I noticed that the flavored ones are usually really high in sugar, even the “healthy” brands. A trick I learned: buy the plain yogurt and add flavor at home. Flavor with fresh fruit puree, no sugar added jams/jelly, or – I know it sounds odd – crystal lite! You can add any flavor crystal light to plain yogurt and it tastes yummy! Pomegrante lemondade personal fav.

      sweet potato pancakes-add 1 jar of sweet potato baby food to the pancake mix, a little cinnamon and pumpkin pie spice if you have it, and you have a whole serving of vegetables in what is usually a not so healthy breakfast! I love these…they taste really good and my kids don't know that they're good for them too!

      Jicama – it's an ugly root that looks like a warped potato, but is is slightly sweet and crunchy and very very low in calories. Great to eat alone, or on top of salads. I eat it alone. Meaning– they are MINE and no one else can have it. :) You'll find them in Publix.

          You peel and eat it raw like a carrot. The skin is fairly tough, but I have learned to start to peel it from the top with a peeler, then most of the time I pull it off in strips with that start. They're great cold, but don't need to be. Best size is medium, sometimes the larger ones have parts on the outside that are tough.

      I love to make homemade salsa. I use Tastefully Simple Simply Salsa and a can of diced petite tomatoes. I slice and avocado and eat 1/4 of it on a low carb wrap with the salsa. It is simply delicious.
      Also, I will mix 1/4 c. of quick oats with 1 tbsp. peanut butter and 1/2 banana. This is a quick, high energy and filling breakfast bite before running the kids everywhere. It is actually really good and good for you.

      i have several….for breakfasst…lemon cottage cheese pancakes…WHO KNEW COTTAGE CHEESE COULD TASTE THIS GOOD??
      for lunch or a snack, i love kabobs…small bite size pcs…always look more appealing and it looks like more than it is when its fancy…mini grape tomatoes, mozzarella balls and basil leaves and a 1 inch cube of your favorite meat…deli turkey, ham, etc…i skewer on the meat chunk, add the cheese, then the basil leaf folded like an accordian and then the tomato….yummmm….i also have a skewer of fruit…1 strawberry, 1 frozen grape, a banana chunk, and an apple chunk, drizzle with a tsp honey…sprinkle with a teeny dash brown suger cinnamon…yummmmy and lastly, tapioca and biscotti crumble…i use the kozy shack tapioca and nonni’s decadence (chocolate) biscottis…break up the biscotti, and layer in parfait glass with pudding…breakfast in a cup!!

      Sam's Club's chocalte almonds. They taste like almods rolled in hot chocolate mix, but only have 1gram of sugar per oz and are high in protein and a healthy snack. I also like the Creame Brulee there (5g sugar per oz).

      My husband made me purchase the Fiber One brand of raisin bran. He had tried it before and we had coupons. I was a little reluctant but have sense fallen in love. It's even better than regular raisin bran becuase it also has granola. It's a smart choice for breakfast and taste great too!

      Oatmeal pancakes are delicious. Substitute 3 cups of oats whizzed in the food processor (whiz, whiz let the kids push the button, it takes a bit) for regular flour. Add 3 tsps of baking powder, 1 dash of salt, 1/2 tsp of baking soda, 6 tbs of sugar/equivalent.

      In a separate bowl combine 1 cup of milk, 2 eggs beaten, 2tbs of coconut oil or melted butter.

      Add wet to dry and let soak for 3-5 minutes. Should be somewhat thick. Cook over medium heat in coconut oil or butter.

      Very good for you. Seriously Check out the Weston Price Foundation about the benefits of coconut oil.

      Here's a great appetizer that's fun for parties, as healthy as you want to make it, is full of protein, and is filling:

      Spread light cream cheese on a plate
      top with cocktail sauce – you can make it spicey if you like
      top with shredded crab

      dip with any kind of cracker you like to make it healthy and save calories

      You can also spread the cream cheese on a cracker, top with a dollop of cocktail sauce and put a cocktail shrimp without the tail on. I love these!

I am going to the gym and working out at least 4 times a week and I have Progresso soup for lunch five days a week. It is really working and I don't feel deprived.       “Light” tiramisu–I actually like it better than authentic versions. In a nutshell, you use angelfood cake slices instead of the lady fingers, and replace half the mascarpone with yogurt cheese (make it yourself by draining plain yogurt in cheesecloth overnight in the fridge). Really tasty!

      salt to taste

Here's what I do: Whole wheat pizza crust from Trader Joe's is only $.99!!! It's super cheap but you have to roll it out yourself. I add TJ's marinara sauce that only has 1g of fat, turkey pepperoni (I'll tell you all about turkey pepperoni in a few), sauteed mushrooms and onions, and skim mozzarella cheese! It's so amazingly delicious! AND HEALTHY!!! Ok, about turkey pepperoni, regular pepperoni is 14g of fat for 6 pieces…yikes! Turkey pepperoni is only 4g of fat for 17 pieces and it tastes exactly the same but isn't greasy! I love it. I have a 5 yr old and he would much rather have my pizza than domino's any day of the week. It only costs me about $7 to make a very large pizza and I always have enough stuff to make it again (minus the crust).

      And for an anytime of the day snack, including a sweet side dish to go with dinner: is Breakstone's, applesauce, raisens, and cinnamon. It's a filler-upper this one is!

      When I was on Weight Watchers, there was a recipe I discovered that was really yummy. It's Deep Dish Pizza. You start w/ a refrigerated pizza dough in the bottom of a cake pan. You then put on a layer of tomato sauce. I like Hunt's basil and garlic. Then you top it w/ low-fat mozzarella and any veggies and low-fat meats you want I would use turkey pepperoni and maybe olives or mushrooms. It was about 4 points/svg which comes out to about 200 cal. My husband loved it too!

      air-popped popcorn – just buy the kernels and put them in a covered saucepan with a little olive oil. Heat it on the stove, shaking it occasionally until it's popped. You can top it with a little salt or some parmesan cheese. Unless you go crazy with the toppings, it's low fat, low calorie, high in fiber, filling, and only a few cents a serving.

      My favorite yummy and suprisingly low calories food is my Strawberry Cheesecake dessert! I revised a recipe when I was on WW. I usually do not eat sugar free things because the sweetener leaves a bad aftertaste, but this one is great!

      Get Angel Food Cake, slice and cover the bottom of a 9×13 pan. Mix two packages Sugar Free Jell-o Cheesecake Pudding (i use skim milk). Layer sliced strawberries between the cake and pudding, then again on top of pudding. Top with Cool Whip Free! It's a great summer dessert. I have taken it to parties, and people can't believe it is low calorie!

      For a topping, cup up a cup or two of strawberries, add 3 teaspoons sugar and 1 teaspoon fresh lemon juice to taste.

      Greek Taboule Salad, easy to make and you won't get enough, I promise! Very little calories, but plenty of vitamins for your body, and tastes great.

      3 bunches of curly parsley
      1 large tomato
      2 medium cucumbers
      1 medim onion
      1/4 head lettuce
      1/2 cup plain couscous
      2 lemons
      2 tablespoons olive oil
      salt to taste

      Very finely chop parsley and the veggies, mix. Juice the lemons, add to salad, add salt to taste. Add olive oil. At last, add 1/2 cup dry couscous, mix, and let stand for 15 minutes before enjoying this delicious treat. This salad is a hit at all of our gatherings, we never have any left! It's low in calories, delicious, provides all your veggie servings for a day, and is full of vitamins!

      I do like the hearty tomato soup by progresso. I recently bought it with the Italian deals at Publix. For a low cal, hearty lunch, I like to wrap a mozzarella cheese stick and a pickle spear with lunch meat. This would be a low cal “sandwich”. Could also put that in a tortilla.

Keep on hand frozen fruit such as strawberries, bananas, blueberries, etc. Add in vanilla yogurt (or yogurt of your choice) along with either fruit juice or sugar free kookaid options. puree in capable blender such as a vita-mix. Quick, easy, very affordable compared to store bought (and as good or better), and delicious!

      Wow so many great ideas! I support the greek yogurt that many said already, but also, oven baked sweet potato fries. Just wash and slice sweet potatoes (about 1 per person for adults) into fry size strips, put on cookie sheet, sprinkle with cinnamon and bake for about 10 minutes on each side at 400. I usually sprinkle a little raw sugar on a few minutes before they're done–YUMMY! And super healthy, full of potassium and lots of vitamins and antioxidants!

      1 can diced tomatoes
      1 can chili beans

      1 pk ranch dressing mix
      1 pk taco seasoning mix
      1 lb lean hamburger meat

      Cook hamburnger and onion then drain. Combine all ingredients in a crockpot and cook until hot and enjoy with crackers or baked scoops!! Love it!

      Also, if you want a great light dessert. Take graham crackers and put some cool whip(suger free, if you like) on them and put them in the freezer for about an hour. They taste like ice cream sandwiches. But, with no chocolate, but you don't miss it. My kids love these, well me and my husband do too. :-) It works better if the cool whip is still a little frozen. Just place a large spoonful on each cracker.

Mix up 2 packs of light yogurt (any flavor is good-I like the key lime) with 1 package of cool whip (light).       1 Fat Free tortilla wrap
      1 slice Canadian Bacon
      1 serving egg beater's egg whites
      2 tbsp Picante sauce

      Dice the the canadian bacon and fry in a pan until lightly browned. (I fry it with a little Pam olive oil spray). Then pour the egg whites over the bacon and cook until eggs are done. Wrap the egg mixture and the picante sauce to make a very yummy and healthy breakfast for on the go. (You can also add a little Kraft fat free cheddar cheese for a few additional calories)

      Skinny cow has the BEST low calorie ice cream! My least favorite part of dieting is cutting out sweets and with skinny cow ice cream I don't have to.

      Vegetable Pizza is delicious as a snack or meal. It can be made even healthier if you use the low-fat or no-fat versions of the rolls, shredded cheese, cream cheese and Miracle Whip.
      Unroll and place 2 cans Crescent Rolls in bottom of cookie sheet and bake for 15 minutes.
      Cool and spread a mixture of 2 packages of cream cheese (room temperature), 1/4 cup Miracle Whip and a tablespoon of dried onions. Next sprinkle about a cup of shredded cheese and press down. Add bacon bits, shredded carrots, cauliflower and broccoli (cut tops into small pieces) and press down. Cut into serving sizes and ENJOY! It is one of my family's favorites!!

      Freeze a ripe banana (even the ones that are getting over ripe). Then use a fork or blender to mash it up and Wah La, not only do you have great banana ice cream that is very healthy, you don't have to throw out your old bananas. You can even store them in the freezer until you are ready for a great snack.

      If you are eating out, it is McAlister's chicken tortillo soup. It is the best and it is good for you. But in the store, find the emerald dark chocolate coated almonds. They make a great snack. Almonds and dark chocolate are both good for you, and this snack tastes wonderful as well. You cant beat a snack that tastes great and is great for you!!!

      A very tasty sweet treat that I have recently gotten hooked on are Special K Chocolatey Pretzel Ceral Bars. They are very good and are only 90 calories!!! A great, healty place to eat in the atlanta area is Doc Greens. They have the best salads and in the line of coupons there is a website, Restaurants.com that has coupons that you can buy to use at restaurants. The coupons range from $10 – $100 and can be purchased for as little as .80. There are other restaurants on there as well. With the $10 coupons usually you have to spend $20 and you will get $10 off,, which for my family makes eating out more apealing than paying full price. Hope this helps!!       I'm addicted to Boca Burgers and the Smart Balance movie theater popcorn. It is only 100 calories for the BIG BAG and it tastes sooooooo bad for you! I actually have to keep checking the nutrition info on the box to make sure i'm not dreaming.

      It is not really surprising, but I love raspberries. They are sweet and tart, and are so good for you. I buy the frozen ones and and a little whipped cream to make a special treat.

      Here is a recipe I really like.

      1/2 cup whole raw almonds
      3/4 cup each walnuts and pecans, halved
      Olive (or a healthier more stable oil like macadamia nut or ghee or coconut oil)
      3/4 tsp ground cumin
      1/2 tsp paprika
      1/2 tsp garlic powder
      1/8 tsp salt
      Cayenne pepper to taste (optional)

      Preheat oven to 350*
      Place nuts in a small bowl. Coat lightly with oil and toss. Add spices and toss to blend thoroughly. Roast until fragrant, about 15 minutes. Store in an airtight container.

      I find this is really satisfying when you need a little snack. Hope you enjoy it too

      Flavored Almonds – in moderation of course! I used to strongly dislike nuts, until I tried these. I'm snacking on habanero barbeque almonds right now! YUM

    • Add baby food fruits and veggies to pancakes, muffins, homemade waffles, brownies, anything that you can sneak that nutrition into! Kids will never know and in many cases it really enhances the flavor of food..

      if you love shrimp youll love my shrimp san paulo its 1 pound shrimp peeled 2 limes and crushed red pepper as much as you can handle. let marinate for 30 minutes no more or the acid will cook the shrimp and then heat a pan with a little olive oil cook till done and woila a low fat tasty meal full of protien

      Enchilada Soup in a Crockpot

      3 uncooked chicken breasts
      1 can enchilada soup
      1 can chicken broth
      1 pack. ranch dressing seasoning
      1/2 pack. taco seasoning
      Juice of 1 lime
      3 Tablespoons of cilantro chopped
      1-2 cans black beans
      1/2 bag frozen corn

      Look 6-8 hours on low. Shred chicken (it will be falling apart) and allow to cook for 1 more hour. Additional toppings: Mexican cheese, sour cream, tortilla chips

The chocolately popcorn is absolutely divine and the combination of salty and sweet is fantastic!
