Quick & Easy Jambalaya

Ingredients

  • 1 lb Kielbasa or Andouille sausage sliced
  • 1/2 cup diced onion
  • 1 garlic clove minced
  • 1/4 tsp paprika
  • 1/2 tsp ground cayenne pepper more or less to taste
  • 1/2 tsp dried oregano
  • salt & black pepper to taste
  • 1 10 oz can tomatoes & diced green chiles like Rotel
  • 1/2 cup chicken stock or water
  • 3 cups cooked white rice

Method

  1. In a skillet over medium heat, brown the sausage pieces on both sides (about 7-10 minutes total). Transfer to a plate, leaving the oils in the pan, and set aside.
  2. Add the onion to the pan and cook for 2 minutes. Add the garlic and cook for an additional minute. Add the paprika, cayenne pepper, oregano, and salt and pepper and cook for a couple more minutes. Add the tomatoes & diced green chiles and chicken stock, reduce heat to medium-low, and let simmer for 20 minutes or until the vegetables are soft and the mixture is reduced and smelling nicely.
  3. Add the sausage back to the tomato mixture and let simmer an additional 5 minutes.
  4. At this point, you can either stir the rice into the tomato mixture or add rice to bowls and ladle the tomato mixture on top. Serve hot.
