      I love to make creamy chicken enchiladas with rotisserie chicken. Using a Publix rotisserie chicken saves me lots of time. All I need to do is shred the chicken and mix with a can of corn and sautéed onions. Next, mix cream of chicken soup and sour cream. Use half the soup and sour cream blend and stir in to chicken and veggies. Spoon this into flour tortillas, roll, and layer in a sprayed 9×13 pan. Spread the remaining soup and sour cream over the top and cover with Monterey jack cheese. Bake until bubbly and cheese is melted. Yummy!

The first meal is just the chicken as it is, with rolls, steamable cauliflower (which I’ve recently discovered I love), and corn sauteed with garlic, onions, and either cajun seasoning or curry. The second meal (my favorite) is elbow noodles cooked in the stock with more corn and some green beans (which are also cooked in chicken stock for the perfect flavor).

    • Getting a rotisserie chicken for dinner is great! It is quick to get and could not be a better choice for dinner when you do not have a lot of time to prepare something. My family likes to have our rotisserie chicken with a vegetable (usually broccoli) and some sort of rice or pasta side…delicious! If we are really in a hurry, we’ll pick up a pre-made potato salad when we get the rotisserie chicken. Yum!

      My favorite summer dinner is chicken with avocado mango salsa, lime cilantro rice and salad. The salsa is really easy if you start with Publix medium salsa in the jar. I add a chopped and peeled mango and avocado. I then add lime juice and chopped up fresh cilantro. For the lime cilantro rice, I just cook some regular white rice and when done I stir in some lime zest, lime juice, chopped up fresh cilantro, a little olive oil and salt and pepper. Yum!!! I’m drooling just thinking about it! Haha!
