I get a lot of requests and questions on how to make quick dinners that don’t feel boring and basic. I know for most of us life is crazy busy and when dinner time rolls around you are just trying to survive till the kids go to bed (maybe that’s just me). Dinner really can be quick, easy and delicious though. It’s okay to think easy for dinner!

A great resource for easy but wonderful dinner ideas is the Best Meals Happen at Home Facebook page. You’ll find recipes they share each day that are delicious, fancy looking, but incredibly easy. Many of them you can even prep ahead of time and just heat them up once dinner time arrives. Another plus is that all the recipes call for ingredients you probably already have on hand or can easily find in Publix.

All it takes is a few minutes of planning and one trip the store to have a full week of wonderful dinners at home! The best meals always happen at home.

I recently made their Beef Brisket for dinner. It was a huge hit and I loved that it only took 15 minutes to get it all together and in the oven. We have a delay bake oven so I set this to cook while we went to church and came home to a wonderful smelling house and delicious dinner!

Easy Beef Brisket

Prep Time: 15 minutes

Cook Time: 3 hours

Total Time: 3 hours, 15 minutes

Ingredients

  • 2 Tbsp. vegetable oil
  • 1 1/2 lbs. boneless beef brisket, rolled, if desired
  • 1 Tbsp. Country Crock® Spread
  • 1 large onion sliced
  • 2 stalks celery sliced
  • 2 carrots sliced
  • 1 tsp. firmly packed light brown sugar
  • 1 bottle (12 oz.) dark-style or stout beer
  • 2 Tbsp. Hellmann's® Real Mayonnaise
  • 1 Tbsp. Maille® Old Style Mustard

Directions

  1. Preheat oven to 325°.
  2. Heat oil in large Dutch oven or oven-proof deep skillet over medium-high heat and brown beef on all sides. Remove beef from Dutch oven and set aside.
  3. Melt Country Crock® Spread in same Dutch oven and cook onion, celery and carrots over medium heat, stirring occasionally, until crisp-tender, about 5 minutes.
  4. Stir in brown sugar and beer and bring to a boil, stirring occasionally. Remove from heat.
  5. Combine Hellmann's® Real Mayonnaise with Maille® Old Style Mustard; rub onto beef. Arrange beef on vegetables in Dutch oven.
  6. Bake covered until beef is very easily pierced with a fork, about 3 hours. Remove beef and let stand before slicing, about 10 minutes.
  7. Serve, if desired, with roasted potatoes and roasted vegetables.
