We love having Mexican-inspired food nights at our house. Whether it’s tacos, enchiladas, or burritos, the meals are generally pretty inexpensive and are quick to prepare.

These Mexican black beans are quick and easy and great as a side dish or for filling a tortilla to make a vegetarian taco.

Mexican Black Beans

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can Rotel
  • 1 cup chicken broth
  • 1 tsp salt
  • 1 tbsp ground cumin
  • pinch of cayenne pepper

Directions

  1. In a small saucepan over medium-high heat, combine all ingredients and allow to come to a boil.
  2. Reduce to low and simmer for 20-25 minutes, stirring occasionally, until the mixture is reduced and thickened and the beans and vegetables have broken down slightly. Serve hot.
