These vegetarian lentil tacos are so hearty and delicious, you really won't be able to tell that they are meat-free.

The first time I made these tacos my family grumbled a little when they found out they weren’t made with ground beef. The truth is that you can’t even really tell!

Lentils are so good for you (and are really inexpensive). They have lots of protein and fiber and are low in fat. Prepare the lentils for the tacos just like you would ground beef (simmer them with taco seasoning) and then load them onto taco shells with cheese, salsa, and all of your favorite taco toppings.

Vegetarian Lentil Tacos

Ingredients

  • 3 cups water
  • 1 cup dried lentils
  • salt and pepper
  • 3 tbsp taco seasoning
  • taco shells
  • toppings: cheese, avocado, sour cream, lettuce, salsa, etc.

Directions

  1. In a small saucepan over high heat, bring the water to a boil. Add the lentils and bring back to a boil. Reduce the heat to a simmer and cover.
  2. Once the liquid has reduced by about half (about 15 minutes), add salt and pepper to taste and the taco seasoning. Stir to combine, cover, and continue cooking until the lentils are soft and all the water has been absorbed (about 15-20 minutes more).
  3. Add to taco shells and top with your favorite toppings.
