pineapple chicken teriyaki

Get your grill ready for this super flavorful pineapple teriyaki chicken! An easy marinade makes for juicy chicken and the pineapple gives the right amount of sweetness.

Note: You can use homemade teriyaki sauce or store bought – it’s up to you!

Grilled Pineapple Teriyaki Chicken Recipe

Ingredients

  • 2 large chicken breasts or 4 chicken cutlets
  • 1 cup soy sauce
  • 1/4 cup olive oil
  • 1/4 cup vinegar
  • 1/4 cup orange juice (fresh or store bought)
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 4 fresh pineapple rings, cores removed
  • 1/2 cup teriyaki sauce (homemade or store bought)

Directions

  1. If you're using chicken breasts, cut them in half horizontally so you have 4 pieces of chicken.
  2. Make the marinade: in a large bowl, add the soy sauce, olive oil, vinegar, orange juice, honey, and garlic powder. Mix together until well combined and the honey is dissolved. Add the chicken pieces, making sure they are submerged in the marinade, cover with plastic wrap, and refrigerate for 3-4 hours.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and place on the grill. Cover and grill for 10-15 minutes, turning once (keep an eye on the chicken; the time it takes to cook will depend on how thick your chicken is).
  4. In the last 5 minutes of grilling, add the pineapple rings to the grill. Cook, turning once, until soft and golden.
  5. Also in the last 5 minutes of grilling, brush the top side of the chicken with teriyaki sauce. Allow to cook for a minute, flip, and brush on the remaining sauce.
  6. Once the chicken reaches an internal temperature of 165 degrees, it's ready.
  7. Serve the chicken with the grilled pineapple slices on top.
