Having a great meal doesn’t have to mean picking up take-out or making another grocery run. Hungry Jack wants to inspire creativity in the kitchen, so they teamed up with Kelsey Nixon from The Cooking Channel’s Kelsey’s Essentials to challenge at-home chefs to put down their shopping lists and think ‘outside the box’ when preparing their next family meal.

Hungry Jack sent me a kit to review and it’s awesome!  They sent me everything I need to make a great breakfast including pancake mix, hashbrowns, a grill, a handy smiley face pancake flipper, and an iPad stand so I can easily look up my favorite Hungry Jack recipes while cooking!

I’m not an expert cook, but I can make an excellent cranberry pecan pancake.  So I grabbed the pancake mix, some Craisins from the pantry and some pecans to make our favorite special pancakes!

Now through November 2, 2011, you’re invited to submit an original recipe using Hungry Jack pancake mix, syrup and/or instant potatoes at the Use Up the Box website in various categories. The grand prize is a year’s worth of groceries!

      okay…..this is honestly – amazing!!  I did exactly this – – THIS WEEK!!!
      I literally had a box of Hungry Jack…..and “used it up”!!!
      And we had not had pancakes or anything in ages.  I was looking around for something different and spied my partially used box of Hungry Jack pancake mix!

      I even went to their website for ideas (after making pancakes one day – then wanting to use up the rest of the box the next day…haha!)

      I ended up making my own version of the Blueberry and White Chocolate Chip Coffee Cake, except rather than using white chocolate (which I did not have), I just used frozen blueberries and subbed the sour cream out using greek yogurt, instead.
      I also added some fresh lemon zest to the batter and lemon juice, along with some zest on top with the sliced almonds and cinnamon!
      This is sooo good!  My family loves it!  :)

      What a coincidence you all are having this contest….and it’s actually called by the name of something I actually did….haha!  so funny! :)

      I liked Hungry Jack of Facebook…wish I could LOVE them on Facebook! My child lived off of Hungry Jack instant potatoes with cheddar cheese melted in them for months when he was cutting teeth and didnt want the chew. I was able to get 2 serving of dairy in and he ate them at least twice a day. THANK GOD for them!!!
