This is the second week I’ve been joining my husband on a Keto diet.  It’s tricky, but paying off as I’m down 10 lbs since joining him.  Don’t worry I’m eating, probably more than I was when I was just trying to eat healthy and watch portion sizes.

We are camping this weekend, so some of our meals are on the easy side so I don’t have to bring the whole kitchen with us.

Jalapeno Popper Chicken 

We got Jalapeno’s in our produce co-op basket this past week so I was on the hunt for a keto way to use them that the kids would eat.  Generally if you take out the seeds and cook them with lots of cheese no one will know they were spicy.  I’ll let know how it turns out!

Salmon with Zucchini Noodles and Alfredo Sauce

It’s time to get a spiralizer if you are doing Keto.  Turn veggies into noodles and then saute in a pan with butter.  I have to say it might actually be better than real pasta…

For low carb seasoning on the salmon:

Mix together a tablespoon of lemon juice with 2 tbsp of olive oil, add in rosemary and Italian seasoning.  Cover the top of the salmon with this and add salt and pepper to taste.  Broil it on high until the internal temperature reads 140 on a thermometer.

Boston Butt BBQ Roast with Keto Slaw

I grabbed a Boston Butt last week (they are on sale at Publix starting tomorrow) that my husband smoked all night and is ready take with us on our trip.  Keto wise we will add a little hot sauce or tangy mustard sauce while the kids do traditional bbq sauce on theirs.   Last week we made this slaw and loved it, so it’s back on as a side kick for this meal and left overs!

Steaks, Roasted Asparagus and Cauliflower

Cauliflower is the new potato in my life.  For this meal that’s what I’m telling myself any way!  Cut up the cauliflower into chunks and put it in a baking dish with butter and salt.  Roast it under the broiler for 5-7 minutes max.  I like to pull it out and add cheese to melt on top.

Tip: shred your own cheese rather than buying shredded.  Shredded cheese has 1 gm of carbs thanks to the cellulose that keeps it from clumping.

 

Sausage, Peppers & Onions Over the Campfire

These are super easy to make and cook plus they taste great.  Add some butter in to help the veggies not burn or stick and close them up to cook.  You can put them straight in the coals or put them on a grill over the fire.  For Keto don’t go to over board on the onions and peppers as they can rack up the carbs quickly.  You can add in broccoli and green beans though!

We are using Lowes Foods fresh sausage works sausages for these, they will be on bogo starting tomorrow.

Keto Asian Pork Chops

I was hunting for another asian meal since we love the tangy sweet flavors of Chinese food.  It’s a hard flavor to recreate in keto though once you take away sugar.  We are going to try this recipe out this week.  Anything with fresh ginger has been a hit for my husband, so I think it will be a winner.
