Three weeks down and I have to confess I ate a cookie yesterday…  it was my first gluten/sugar in three weeks which honestly surprises me that I made it that long.  Don’t worry I wasn’t leaping off the train, we were having fair baking day and with 3 batches of cookies, brownies, cupcakes and pound cake all in the kitchen I think eating just one cookie was a success!

Now back into Ketosis and hopefully another 3 weeks or more before my next cookie…

Here’s what we are eating this week:

Breakfast for Dinner – Eggs & Bacon
(+grits for the girls)

This is normally a regular around here, but we’ve taken quite a bit off from having it with me eating eggs every morning.  We have 16 chickens in the yard, so breakfast is a requirement just to have room in the fridge for other things!

Steaks, Roasted Asparagus and Cauliflower

I made cauliflower like this a few weeks ago and now my kids cheer when it’s back on the menu.  It tastes amazing and is super quick.  Cut up the cauliflower into chunks and put it in a baking dish with butter and salt.  Roast it under the broiler for 5-7 minutes max. I like to pull it out and add cheese to melt on top.

Smothered Pork Chops with Asparagus

This is our new recipe to try this week.  It looks amazing, plus anything with caramelized onions is like eating dessert to me.

For the asparagus, sprinkle with salt, pepper, and a little bit of garlic powder and cook with butter in a pan or put it under the broiler in the oven for a few minutes.  It’s another easy vegetable to get on the table that always tastes great.

Pizza Night For the Kids / Chili’s For Date Night

We are going to go out in the rain and have a date night while the kids do frozen pizza at home.  At least I don’t have to be here to watch them eat and long to steal their uneaten crusts…

The plan is to head to Chili’s to use a gift card we have.  I’ve found with keto it’s best to research your meal options before you go and not to even get the menu at the restaurant (it only makes you want things you can’t have).  Our plan this trip:

Dinner for 2 for $20
House salads for both
(2) half rack of ribs dry rub, with no sauce and double broccoli

Taco Salad (Nachos for Kids)

This is one of the easiest meals to make Keto friendly and it still tastes like you want it to.  Season your meat with cumin and a bit of chili power, and add in all your favorite toppings.  Almost everything is allowed except the tortilla!

Ranch Chicken Wings + Keto Slaw

Before I joined my husband on keto I made these for him and they were a hit for everyone.  Grab a ranch dressing dry mix packet and season chicken wings and drumsticks with about 1/2 of the packet.  Put them in the oven under the broiler on high or stick them on the grill.  The seasoning packet adds less than 1 carb per serving, so go ahead and serve with blue cheese or ranch dressing.
