I’ve taken a few weeks off from sharing meal plans as summer got really busy for bit. I got a number of emails from folks asking where they went, so thanks for letting me know they were helpful!
Here’s our plan this week. We are getting adjusted to being a sports family with our big girls now having practice three nights a week for Cross Country. My goal is to still try to eat together, so a few nights this week we are doing meals that can cook and be done early or that we can take with us and have a picnic. This is week one of night practices, so we’ll see how this works out for us…
Our Meal Plan for the Week
Monday – Teriyaki Chicken with Sautéed Veggies
My girls get a little jealous of our parent Chinese food night on Sunday nights after they go to bed… so this week they asked for Chinese for everyone. An easy dish that works for everyone is Teriyaki Chicken, it’s more like chicken with yummy sauce and a hint of Asian. This is a great easy recipe and I love that they provide common substitutes for folks that don’t always have the random ingredients.
Tuesday – Picnic Dinner with Tuna Pasta Salad & Fruit
Tuna Pasta salad is a perfect make ahead meal that all our girls love. My husband even hates (and that my not be strong enough) Mayo, but he still loves this.
(1) box of pasta
(1) can of tuna, drained
(2) hard boiled eggs, chopped up
1/2 cup Mayo
Sweet Relish, Salt, Pepper to taste
1 tbsp sugar
Boil pasta and drain. Add all the other ingredients with the pasta and stir. I usually keep adding relish until it seems right. The sugar might seem random but it adds something to it!
Tip: You can add any veggies to this your family will eat. Peas, celery, and carrots are all ones we’ve tried.
Wednesday – Red Beans & Rice, with salad
This is a quick cook meal. We cheat and grab a Zatarian’s Red Beans & Rice Mix, just add a package of sausage. We also add fresh green peppers and onions and a bit more water to make it more soupy.
