My favorite printer is on sale this week at Office Depot!  You can grab the Brother HL-2240 printer for $59.99 shipped (or pick it up at a local store).

This is a black & white laser printer that can print up to 700 sheets with the toner it comes with.  Then you can replace the toner for around $20-$30 with a high yield drum that prints thousands of sheets!

Another reason to switch, besides the massive savings on ink, is that coupons printed with laser printers tend to scan without issues in most stores.  Ink-jet printers are known for uneven ink printing that really doesn’t work well with the new bar code on printable coupons.

There are a number of new printable coupons today! I’m loving the high value Keebler coupons and the new $1 off Tums. Many stores sell 36 ct. rolls for right around $1, so this makes them FREE.

For the next four weeks Publix and the National Pork Board are teaming up to help you save money and see all the healthy benefits of pork.  Each week they will have a different cut of pork meat on sale, and each week I’ll be sharing some great recipes that you can make with that cut.

The National Pork Board wants everyone to make a challenge to eat more healthy in 2012.  Whatever your challenge big or small, I encourage you to spend at least the next four weeks with me as we strive to eat more homemade meals and focus on healthy choices.

This week we have pork tenderloin on sale at Publix stores.  To go with our sale, the Pork Board has a number of great recipe ideas (that are all healthy by way).  They all sounded so great that I had hard time picking what we would cook.

                My top three:
Sauteed Pork Medallions with Lemon Garlic Sauce
Roast Tenderloin with Winter Greens and Caramelized Onions
Grilled Orange-Ponzu Tenderloin with Napa Cabbage and Carrot Stirfry

I loved that all three were different from our normal routine and that they were all cooked in a very healthy way.

We ended up choosing the the sauteed medallions.  It took all of 20 minutes to have dinner ready and on the table!!  For my fellow weight watcher fans, each recipe has complete nutritional info, so this is a 4 point plus entree.  I added steamed asparagus and oven roasted potatoes to round out the meal.  One note, I reduced the sauce a bit too much and the lemon became alot stronger, so keep to the directions when you get to that point!

Stay tuned each week for a new set of pork recipes.  Next week it’s all out “Game Day” meals!  You can also find more great recipes of the Pork facebook page.

Heads up that at the end of our four weeks I have quite a bit of free pork to giveaway…

I am working with Publix, the National Pork Board and the Motherhood to bring you this series, all thoughts above are 100% my own.

Target has a couple good deals this week, make sure you grab those Bodega text coupons.   There are a few things this week that just aren’t good deals.  I’ve tried to point them out and show you where other items are cheaper at other stores.  Personally the more you study prices you’ll notice that the grocery deals can be found cheaper in other stores most weeks.  I love Target though, don’t get me wrong.
