Welcome to our monthly post on how to stock your freezer!

I have found over the years that I do not enjoy doing a huge cooking day where I make and freeze 20 casseroles. Instead, I like doing smaller batches using one main protein or ingredient and doing that slightly more often.

Last month I shared how to do this with ground turkey; today I’m going to share 5 freezer chicken thigh recipes as well as a shopping list. The prep for this can easily be knocked out in a morning, and many of the ingredients are ones you probably already have in your pantry or fridge.

Stock the Freezer: Freezer Chicken Thigh Recipes (with Shopping List!)

If you make all 5 of these, it should be enough for 1 meal of each for a family of 4-6. If you have a larger family, you may want to double the recipes to make sure you have enough.

At the end of the post is a grocery list if you want to make ONE batch of each of these recipes.

Chicken Shawarma (serves 4-6)

To freeze it ahead of time, make the marinade and add the chicken to a freezer safe bag. Freeze it flat. Before cooking, let it thaw in the fridge ahead of time and then proceed with the instructions!

White Chicken Enchiladas (serves 4)

Note that this calls for cooked chicken, so just cook your boneless skinless chicken thighs ahead of time for some incredibly juicy and moist enchiladas. To freeze, prep the chicken and cheese in the tortillas but do not make the sauce until the day you’re ready to cook.

Large Family Lemon Garlic Chicken Thighs (serves 6 if cut in half)

Check out the link for how to freeze this. You’re basically just getting it all in a bag to put in the freezer so you can simply dump it in your slow cooker when you’re ready to make it.

Slow Cooker Asian Chicken Thighs (serves 6)

You’ll freeze this similarly to the other chicken marinades. Just put it all in a freezer safe bag to freeze and then thaw it before you’re ready to cook!

Chicken Spaghetti (serves 4-6)

The link will give info about how to freeze it, but they do recommend preparing the full recipe but freezing it before baking it.
