gluten free blueberry cobbler recipe

Welcome to the start of Blueberry season!  Fresh fruit instantly makes me want to make cobbler.  After a few years of playing around I feel like we’ve finally found the best gluten free cobbler recipe!

This Friday Whole Foods will have $1.99/pint organic blueberries.  The sale is for 5/31 only.  In honor of that great sale I thought I’d share our blueberry cobbler recipe (or any fruit really).

Gluten Free Blueberry Cobbler Recipe

1 cup Pamela’s Classic Vanilla Cake Mix
3/4 cup sugar
3/4 cup milk
3-4 cups of blueberries (or fresh/frozen fruit)
2 tsp baking powder
1 stick of butter

Directions:

  1. Melt butter, pour into 8×8 or 9×9 baking dish.
  2. In separate bowl combine dry ingredients.
  3. Add milk to dry ingredients and blend.
  4. Pour batter into melted butter, do not mix.
  5. Drop fruit on top.
  6. Bake at 350 for 50 minutes.

If you want it to have a crumbly top then 3/4 through baking put some dry Pamela’s mix on top, just sprinkle it around.  Also if you only have frozen fruit, that’s fine just drop it right on top frozen and put it in the oven, it will come out perfect with no need to thaw anything before baking.

      I saw on Pamela’s Products web page that they carry this cake mix at some Bi-Lo stores but it didn’t list all of the stores. Anyone know if generally all Bi-Lo stores carry this or if it;s only select stores?

        I know that not all Bi-Lo stores carry gluten free products. My Bi-Lo just recently started carrying them. But I can’t really speak to this particular product. I think I saw it at my store last time, and if you are near a Kroger or Publix, I would check their stores too. I tend to find more gluten free products at their stores than Bi-Lo.

        Not sure where you live, but near me, the Food Lion stores carry Betty Crocker gluten-free cake/brownie mixes. We tried some and the baked goods were sooo tasty!

      MMMM! I am going to try this recipe (have to sub stuff for the dairy though since we are dairy free too). I am ready to load up on these berries! Use some now and freeze the rest for later.
