gluten free blueberry cobbler recipe

Welcome to the start of Blueberry season!  Fresh fruit instantly makes me want to make cobbler.  After a few years of playing around I feel like we’ve finally found the best gluten free cobbler recipe!

This Friday Whole Foods will have $1.99/pint organic blueberries.  The sale is for 5/31 only.  In honor of that great sale I thought I’d share our blueberry cobbler recipe (or any fruit really).

Gluten Free Blueberry Cobbler Recipe

1 cup Pamela’s Classic Vanilla Cake Mix
3/4 cup sugar
3/4 cup milk
3-4 cups of blueberries (or fresh/frozen fruit)
2 tsp baking powder
1 stick of butter

Directions:

  1. Melt butter, pour into 8×8 or 9×9 baking dish.
  2. In separate bowl combine dry ingredients.
  3. Add milk to dry ingredients and blend.
  4. Pour batter into melted butter, do not mix.
  5. Drop fruit on top.
  6. Bake at 350 for 50 minutes.

If you want it to have a crumbly top then 3/4 through baking put some dry Pamela’s mix on top, just sprinkle it around.  Also if you only have frozen fruit, that’s fine just drop it right on top frozen and put it in the oven, it will come out perfect with no need to thaw anything before baking.
