Here’s a recipe for skillet sausage and veggies, a.k.a. the easiest healthy and homemade dinner on the planet.

I’m not sure if that claim is 100% accurate, but this meal is so easy because you basically chop some things up, heat them up, and then eat them up. Use whatever veggies you have on hand!

Tip: This meal would also be really good piled on a hoagie roll with some provolone!



Skillet Sausage & Veggies

Ingredients

  • one package kielbasa sausage (usually 14-16 oz), cut into chunks
  • 2 tbsp butter
  • 1 bell pepper, sliced into thin strips
  • 1 medium onion, sliced into thin strips
  • 1/2 cup frozen corn kernels
  • salt and pepper to taste

Directions

  1. In a cast iron skillet over medium heat, add the sausage chunks and cook until browned on both sides, about 7 minutes total. Remove the sausage pieces to a plate and set aside.
  2. Add the butter to the skillet, allow to melt, and then add the bell pepper and onion. Allow to cook until softened and slightly browned, about 7-8 minutes.
  3. Add the corn kernels and salt and pepper and cook until the corn is heated through, about 2 minutes.
  4. Add the sausage back to the pan, stir around, and serve hot.
