There are lots of reasons to meal prep. Sometimes it’s for nutritional reasons–if the meal is already ready, you know what the nutrition info is. Other times it’s just for convenience. I know I’m much more likely to eat a balanced meal if it’s already in the fridge and all I have to do is heat it up in the microwave. After visiting a Korean restaurant in our area, I fell in love with a flavor that is common in Asian dishes: Gochujang. Gochujang is a paste made of red peppers, so it has some spice to it. I love all the spices that are added in and have been experimenting with different ways to use it in my cooking. These Gochujang beef bowls come together in less than 30 minutes and hold up great in the fridge over the course of the week!
Gochujang Beef Bowls | Easy Meal Prep Ideas
Your first step is to procure some Gochujang! I got mine on Amazon. It lasted for months!

A little goes a long way. I used about 6 tbsp. in this recipe that made multiple servings, but if you’re not big on spice, you may want to only add a little at a time and see how you like it.

I used ground sirloin for my meal prep, but any ground beef will work (even ground turkey!).

The other ingredients you will need are soy sauce, rice vinegar, and ginger paste. I also added some extra crushed red pepper because I like it spicy!

I wanted to do broccoli and rice with my beef, so I threw a couple bags of frozen broccoli in the air fryer.

It was done in less than 10 minutes and was nice and crispy! I also used some microwaveable rice.

In each container, I included rice, broccoli, and a portion of the beef.

I ran out of broccoli and rice for all the portions, but I just measured out beef into additional containers so that I could add broccoli and rice a different day. It will still save me a lot of time!
Ingredients
- 2 lb ground sirloin
- 1/2 cup soy sauce
- 2 tbsp. ginger paste
- 6 tbsp. Gochujang red pepper paste
- 1/4 cup rice vinegar
Directions
- Brown the meat and drain any excess grease.
- Add the soy sauce, ginger paste, Gochujang, and rice vinegar and stir to combine all the ingredients.
- Add salt and pepper to taste.
- Serve with roasted broccoli and jasmine rice.
