Here’s to all the moms (and dads) that have gone back to lunch packing duty. Whether you are an assembly line sandwich maker or do them each one at a time, packing lunches can get old fast… Keeping straight who wants mayonnaise and mustard, who is no mustard, and who hates lettuce can make my head spin! I need a chart.
While I don’t think we need create lunchbox guilt, I am all for figuring out new sandwiches, and things to pack so lunch isn’t just the same old sandwich. Turkey & Bacon Avocado Club
Egg, Chicken or Tuna Salad – these three make me happy because everyone gets it the same way
Fried Green Tomato Sandwich – layer fried tomatoes with fresh ones, I also add cheddar cheese
Tomato – to be a true tomato sandwich it’s only bread, mayo and tomatoes…
Bacon, Lettuce, and Tomato – spice it up and make it with brie cheese, you’ll thank me
Bacon, Pimento, and Tomato – this is my favorite!
Tomato and Egg – slices of hard boiled egg and fresh tomatoes with salt, pepper and mayo
Steak Panini – a great way to use any left over meat
Grilled Cheese – use mayonnaise instead of butter for extra flavor and to keep the bread from burning
We cooked a couple pounds of bacon at time and then freeze all the leftovers. Having it cooked and on hand, your crew will love the addition to their sandwiches. Everything is better with mayonnaise and bacon…
