I know that some of you are awesome in the kitchen and very creative, so you guys don’t want to miss out on a contest Jif is holding right now.

This holiday season, Jif has invited home cooks to submit their peanutty seasonal recipes in the Jif New Classics Recipe Contest. From now through January 16, 2012, submit your original holiday dishes at Jif’s website in either the sweet or savory category for a chance to win one of two $10,000 prizes.  There are actually a ton of great recipes you can make using peanut butter – not just peanut butter and jelly sandwiches.  (I’m craving peanut butter no-bake cookies right now).

Just to show you that the south has a fighting chance:  Last year’s Sweet Recipe Winner was Mary from my home town of Columbia, SC with Peanut Butter Caramel French Toast.  The Savory Recipe Winner from last year was Susan from Allen, TX with the Peanut Romesco Rigatoni with Grilled Shrimp.

      I actually use Chunky Peanut Butter to make an African Style Beef stew. It has nothing to compare it to. . . You serve it with fresh bananas and coconut flakes on top, or whatever you what to add. Sounds strange but it is DELICIOUS. Everytime we serve it people love it.

      I’m not sure what they are called but I make them every year. Spread peanut butter on ritz crackers, sandwhich style then dip them in melted vanilla almond bark. Eat lots of them once the almond bark hardens. Yum-o!

      My husband makes peanut butter smoothies and peanut butter milkshakes all the time.  I have to keep peanut butter and powdered milk in my house so he can make them.  He also adds sugar and vanilla to the recipie.  If we do not have powdered milk, he will us regular milk.  Of course, if we have ice cream he will add the ice cream.  We also like to add chocolate syrup.  Talk about a sugar rush!!  We also like to put peanut butter, ice cream, and chocolate syrup in a bowl and mix them together.

      My first job was at a smoothie bar in a health food store and we had a smoothie called the “Monkey Flip” with bananas and peanut butter (you would choose chocolate, vanilla, or carob as the main flavor) and I still make them at home.  Delicious!
