Having a meal plan is a huge way that we stay on budget and that I stay sane. I write it on a big piece of paper and stick it on the fridge each week, so no one ever has to ask “What’s for dinner?”
I also have a great husband that some nights will look at the meal plan and get started on dinner if I’m busy! As long as he keeps doing that, I’ll keep making a meal plan!!
Monday – Red Beans & Rice
Grab a Zatarian’s Red Beans & Rice Mix, and add a package of sausage. We also add fresh green peppers and onions and a bit more water to make it more soupy.
Tuesday – Curry Chicken, Rice & Green Beans
This is using a Tasty Bite Simmer Sauce. These were on sale a few weeks ago for 99¢! Here’s a link to see what it is, but please don’t buy it here it’s crazy expensive. All you need to do is add the chicken and it’s incredible tasting!
My older girls have been asking to try their hand at making Naan (a traditional Indian bread). We are going to try this recipe this week. It does take 3 hours for a few risings, so hopefully dinner won’t be at midnight!
Wednesday – Hamburgers & Hot Dogs with fresh coleslaw and baked beans
What else are you supposed to eat on July 4th? Our go-to recipe for coleslaw is KFC Copy Cat Coleslaw.
Tip: This recipe calls for buttermilk, which I never buy. Just make your own by adding lemon juice to milk.
Thursday – Grilled Chicken, with grilled Squash & Zucchini
I love when dinner doesn’t have to make my kitchen dirty!
The trick to dinner all on the grill is timing everything. We use a grill basket and throw the veggies on cut up so they cook faster, add a little bit of olive oil so they don’t stick.
Friday – Make Your Own Pizza Night
While this is a weekly favorite in our house, the plan is to mix it up a bit this week and make at least one BBQ Chicken Pizza using left overs from Thursday night. It’s one of my girls favorite type of pizza, so it’s one of those meals you do because you love them.
Saturday – Left Overs (+Freezer Cooking)
Everyone needs a clean out the fridge night. My husband has started giving it a french accent and saying we are having Le’Fevours.
I also plan to do a bit of cooking ahead on Saturday for next week. I’m leaving my sweet husband with three kids and taking our two big girls on a trip with me to a conference! We are excited at time to do girl things, he’s not as excited…
