Wondering what to eat this week? Here’s a look inside what we’re eating at our house this week. I usually focus on two breakfasts and two lunches, and if someone wants something else, they’re on their own! I’m trying my own version of breakfast sandwiches and also using up some canned pumpkin in the form of pumpkin enchiladas and pumpkin waffles. We’re also going to be using up our Easter leftovers by having a whole night of cleaning out the fridge, and then using ham in some fried rice.
