Warm weather is coming! Although, if you live in the South, you may have had some of the same random weeks of warm weather that we’ve experienced. As spring comes, I am still in the mood for soups from time to time, but I also want easy and simple recipes for a season that for us is filled with activities and being out and about.
Before we get to this month’s meal plan, I want to share how I look at dinner. First, I make sure all of our dinners include vegetables in some form. I also try to have at least one thing in the meal that everyone in our family likes. Sometimes that can happen all in one main dish, like my thai-style beef stir fry (different family members dislike different parts of the stir fry, but nobody complains about the rice!). There are other nights where most of the meal is pretty balanced, but we might have bread on the side. Finally, instead of telling you what vegetable to include as a side for the whole month, I’ve just put “vegetable side” on the printable. Choose what your family likes or what you can get for the cheapest at the store and eat that! Like last month, I somewhat stuck with a theme for certain days. I don’t always do this at home, but when coming up with a long-term plan, it’s helpful to provide some structure. I chose Mondays for soup because Mondays at our house are sometimes insane and a bowl of soup at the end of the day is super comforting. For weekends, I chose either really hearty meals in case you’re having company, or super simple meals that won’t wear you out if you’ve spent the day at the soccer field.
This is not geared toward a particular diet. There are some days that will fit great if you’re keto, and others that will be hard to adjust if you have certain dietary restrictions. Choose something you like for those days, or go back to the February 2019 monthly meal plan and see if there’s something there you can make instead.
Even if this is just an avenue for you to find some new, frugal recipes that you haven’t tried, I hope you find this monthly meal plan helpful!
