One of my goals for this year is to eat more fresh fruits & veggies. The best way I can think of to get some variety is to make a small salad with each meal. It doesn’t have to be huge or complicated, but I’ve found it makes the meal feel a little fancier if I get to have a salad course before hand. You definitely want to skip the heavy dressings and calorie-filled toppings, but have some fun so it’s not just lettuce and vinegar.
Here are some creative recipes I’ve compiled for introducing salads back to the dinner table! If your family is big on salads, or you have a favorite combo, I’d love to hear about it.
