5 Easy & Delicious Chicken Breast Dinners (Plus a Publix BOGO Deal!)

Need some fresh dinner inspiration? Chicken breasts are BOGO at Publix this week (11/4-11/10), making it the perfect time to stock up and plan a few easy, budget-friendly meals!

Chicken breasts are one of my favorite proteins to keep on hand because they’re so versatile. Whether you’re craving something warm and comforting, a quick weeknight dinner, or a meal the whole family will actually eat, there are endless ways to prepare them.

Here’s a freezer tip: Did you know that chicken breasts can technically stay frozen indefinitely when kept continuously at 0°F? For the best quality, though, the USDA recommends using frozen chicken breasts within 9 months. They’ll remain safe beyond that as long as they’re properly frozen, but the texture and flavor may change over time.

And one important cooking reminder: Whether you’re baking, grilling, frying, or boiling chicken breasts, the internal temperature needs to reach 165°F on a meat thermometer to be safely cooked.

Now, let’s put that BOGO chicken to good use!

1. Crockpot White Chicken Chili – The Chunky Chef

This is my absolute cold-weather go-to! I’ve been making The Chunky Chef’s Crockpot White Chicken Chili for years, and it never disappoints.

It’s creamy, hearty, packed with flavor, and one of those meals that tastes just as good (if not better!) the next day. I love that you can toss everything into the slow cooker and let it do the work.

Why I love it: It makes enough to eat on for days, which means less cooking throughout the week! Add your favorite toppings like shredded cheese, avocado, tortilla strips, or sour cream.

2. Easy Lemon Pepper Chicken & Creamy Pasta

Sometimes the simplest dinners are the best! This is an easy meal to throw together with ingredients you probably already have in your kitchen.

Coat your chicken breasts with a little olive oil, salt, and lemon pepper seasoning, then grill or bake until cooked through.

While the chicken cooks, boil some egg noodles and make a quick cream sauce using butter, garlic, heavy cream, and Parmesan cheese (or a store bought jar will be just fine!). Toss the noodles in the sauce, slice your chicken, and serve it on top.

Make it your own: Add broccoli, spinach, mushrooms, sweet peas, or whatever vegetables you have on hand. You can also swap the egg noodles for any pasta your family prefers.

It’s an easy way to turn a few inexpensive ingredients into a delicious dinner!

3. Bruschetta Chicken Bake – The Pinning Mama

If you love the fresh flavors of tomatoes, basil, garlic, and cheese, this one is for you!

The Pinning Mama’s Bruschetta Chicken Bake is a delicious way to dress up ordinary chicken breasts without a lot of extra work.

One of the things I love about bruschetta chicken is how many variations you can make. Bake it in the oven, cook it in a cast-iron skillet on the stovetop, or throw it on the grill!

Serving idea: Pair it with pasta, rice, roasted vegetables, or a simple side salad. It’s an easy dinner that feels a little fancier than your typical weeknight meal.

4. Air Fryer Chicken Breasts – The Pioneer Woman

If you haven’t tried cooking chicken breasts in your air fryer, you’re missing out on one of the easiest ways to get dinner on the table!

The Pioneer Woman’s Air Fryer Chicken Breasts are a great option for busy evenings when you don’t want to heat up the oven or dirty a bunch of pans.

And if you’ve got picky eaters at home, keep it simple!

My kid-friendly dinner idea: Pair the chicken with white rice and a can of corn. That’s it! A simple, filling dinner without spending an hour in the kitchen.

You can also slice up leftover chicken for wraps, salads, or sandwiches the next day.

5. Million Dollar Chicken Casserole – Plain Chicken

Sometimes you just need a good, old-fashioned comfort food casserole!

Plain Chicken’s Million Dollar Chicken Casserole is creamy, cheesy, and topped with buttery crackers. What’s not to love?

This is also one of those recipes that’s great to make when you want to take someone a meal. Whether it’s a new mom, a neighbor recovering from surgery, or a friend who could use a little help, a homemade casserole is always a thoughtful gesture.

Budget-friendly tip: Cook extra chicken breasts ahead of time and shred them for casseroles, soups, and other easy meals throughout the week. I like to shred chicken breasts and make different types of chicken salad with whatever other ingredients I have on hand.

Stock Up While Chicken Breasts Are BOGO at Publix!

When you find a good BOGO deal on a versatile protein like chicken breasts, it’s worth taking advantage of it!

Divide larger packages into meal-sized portions before freezing so you can pull out exactly what you need. Label each package with the date, and you’ve got the start of several easy dinners ready to go.

And remember, you don’t need complicated ingredients or hours in the kitchen to make something delicious.

Now I want to hear from you!

What’s your favorite way to prepare chicken breasts? Do you have a go-to recipe your family requests over and over?
