The transition back into school can be tough, no matter how you educate your kids. I always like the return of more structure, but it also means that we are busier with more activities. Especially as kids get older, the evenings can get really busy. You also may want to be able to spend time with your kids in the afternoons instead of slaving away in the kitchen (and in the South, it’s way too hot to be doing that!). Here are 5 recipes for easy school night dinners. The recipes I share are pretty easy, but I’ve also included some tips to make them even easier!
5 Easy School Night Dinners

Baked Ziti | Recipe by The Kitchn
Make this even simpler by just using jarred sauce and not adding the onion and garlic like the recipe suggests. This can be prepped in the morning and left in the fridge. Serve with frozen broccoli. Bonus tip: Make a double batch and freeze one!

Sloppy Joes | Recipe by Eating on a Dime
This version is simple and way better than the kind that comes in a can! Serve this on buns with frozen veggies for a side.

Chicken Stir Fry | Recipe by Mom on Timeout
Make this even easier by using frozen veggies instead of chopping up fresh veggies. You can even used jarred stir fry sauce if you don’t want to make your own. Serve with rice or cauliflower rice.

Pizzadillas | Recipe by Budget Bytes
These are a classic in our house. They don’t even have to be pizza themed—you can make quesadillas with anything! I’ve seen cheeseburger quesadillas, black bean and cheese–use up what you have. Serve with fruit.

Soup and Sandwich
You can use canned soup or make a simple soup like tomato soup or chicken noodle soup. Serve with regular grilled cheese or add some deli meat to up the protein on the sandwiches.
