I’m trying to find ways to eat more protein and fewer carbs without having a huge lifestyle change, and so I decided to see if I could tweak good ol’ sloppy Joes and make them a little more nutrient dense! I have fond memories of sloppy Joes as a kid, but most recipes have a lot of added sugar, and when you stick them on a regular bun, they are not a low carb option! These chicken sloppy joes are much easier on your diet and are also delicious!
Easy Chicken Sloppy Joes
All you need for the sloppy Joe mixture is ground chicken, some veggies, tomato sauce, and some spices.

Start by sauteing diced onions and peppers and minced garlic in a large pot.

Once they are soft, add your ground chicken.

Then cook the ground chicken until it is browned. You may need to drain excess grease after the chicken is done cooking.

Then add the tomato sauce, mustard, soy sauce, and spices. It may be a little watery, but you can let it simmer for a while if you want it to get thicker. Then add salt and pepper to taste.

I got these low carb buns at Walmart and they were actually really good! Each one is only 50 calories and they have a ton of fiber.

I ate two for a full meal, and there was plenty leftover.

We will plan to eat the leftovers on the rest of the buns or to mix it in with rice for a quick lunch.
- 2 lb ground chicken
- 2 bell peppers diced
- 1 onion diced
- minced garlic
- 1 15 oz can tomato sauce
- 2 tbsp. dijon mustard
- 4 tbsp. soy sauce
- 1 tbsp. smoked paprika
- Buns
- salt and pepper
Turn a large skillet or Dutch oven on to medium high and saute the peppers, onion, and garlic until soft.
Add the chicken and cook until it is browned. Drain the grease if necessary.
Add the tomato sauce, mustard, paprika, and soy sauce and stir to combine.
Continue to simmer for 10-15 minutes to let some of the liquid evaporate.
Add salt and pepper to taste.
Serve on buns.
