Here's a great recipe for Pumpkin Top Cookies using Hungry Jack pancake mix.

Everything seems a little more special at Christmastime.  It’s full of traditions, lights, great music and great food.  We may have just found a new tradition thanks to Hungry Jack!

We love getting together for breakfast (and breakfast for dinner).  Did you know that you can use Hungry Jack mix to make more than just pancakes?  They sent us some Pumpkin Spice pancake mix and we decided to try something different with it.  I went on the search for recipes and found a couple that we wanted to try.  We tried Pumpkin Top Cookies and Easy Pumpkin Roll.

Easy Pumpkin Roll

Our Easy Pumpkin Roll didn’t turn out as pretty as the picture, but it was a nice try for something different!

The Pumpkin Top Cookies were much easier and I had some help in the kitchen thanks to my girls!

Hungry Jack Cookies

Here’s what you need:

– 1/2 stick Crisco Baking Sticks All-Vegetable Shortening
OR 1/2 cup Crisco All-Vegetable Shortening
-1/4 cup milk
-2 teaspoons vanilla extract
-3 cups Hungry Jack Complete Pumpkin Spice Pancake & Waffle Mix
-1 cup powdered sugar
-48 whole roasted almonds

I think they turned out great!  They were a sweet treat and yielded a good number of cookies.  I think the roasted almonds were the perfect topper and a real crowd-pleaser.
