Have you ever been to Carrabba’s and had their Mama Mandola’s Sicilian chicken soup? It’s a super flavorful and slightly spicy chicken soup.
This copycat recipe is easy to make and tastes so much like the restaurant!
Tip: I used Better Than Bouillon to give this soup a rich taste, but you can always substitute regular bouillon (or simply leave it out).

Ingredients
- 4 tbsp unsalted butter
- 3 celery stalks, diced
- 5 carrots, peeled and diced
- 2 large russet potatoes, peeled and diced
- 1 medium onion, diced
- 4 cloves of garlic, minced
- salt and pepper
- (2) 32 oz cartons of chicken broth
- 2 tbsp Better Than Bouillon base
- 2 cups cooked and shredded chicken (I used a rotisserie chicken)
- 1 15 oz can diced tomatoes (with the juice)
- dash of cayenne pepper
- 1/4 tsp dried thyme
- 2 tsp poultry seasoning
- cooked Ditalini pasta
Directions
- In a dutch oven over medium heat, melt the butter.
- Add the celery, carrots, potatoes, onion, and garlic and cook until the onions are soft and translucent, about 7 minutes (sprinkle in a little salt and pepper as it cooks).
- Add in the broth, Better Than Bouillon, chicken, tomatoes (and their juices), cayenne pepper, thyme, and poultry seasoning. Bring to a boil, then reduce heat to a simmer, and cover.
- Stir the soup occasionally while it cooks. Simmer for 25-30 minutes until the potatoes are tender. Taste and make adjustments to the seasoning if needed.
- To serve, add some cooked Ditalini pasta to a bowl and ladle the soup over the pasta (I like to do it this way because if you leave the pasta in the soup it tends to soak up the liquid and get really mushy).

Thanksgiving is such a fun holiday to decorate for. There is something about pumpkins, candles and fall foliage that makes the home feel a little brighter. Adding just a few of these fall accents to the mantel or dinner table is all it takes to make the place look like new!
Decorating for Thanksgiving doesn’t have to cost a lot. Shop for items at your local thrift shop and dollar store. Then shop the clearance section at craft stores plus use some of what you already have! Gain some inspiration from the ideas below.
Warm neutral colors with lots of textures and finishes bring warmth and simplicity to this mantel. A banner and lettered pumpkins provide a nice remember to always give thanks. While those in the photos were DIY, you can create a similar look with these well-priced engraved pumpkins.
Leaf garland, pumpkins on candle stands and a wreath in a window frame make this mantel simple yet elegant. Use real or fake pumpkins, pick up an old window frame and candle stands at a thrift shop, and finish it off with a family photo. Check your local dollar store for a similar thankful garland or grab this one!
Layer a large mirror with a pumpkin wreath and rustic sign. Add a leafy pumpkin garland and a bit of candlelight with an antique lantern and/or candlesticks for a relaxing ambiance.

This beautiful centerpiece is super easy to recreate! Jenny Hobick provides step by step instructions. First, find a vase to fit in your pumpkin and choose the flowers you want. Draw an outline of the vase around the top center of the pumpkin so you can cut and carve it out. You can either use floral foam or not to start arranging the flowers. You can make it as dramatic or simple as you want with the colors and even the type of pumpkin you like best.
