Fresh green beans are some of my favorite vegetables to use because they’re inexpensive and simple to prepare.
You can generally find them on sale all year long. Plus, they’re great to clean and trim and then throw in the freezer for veggie soups and stir fries.
Here’s my favorite way to prepare them on weeknights (which, in my language, means fast and simple). We usually have them with grilled chicken and roasted sweet potatoes or squash.
Ingredients
- 1/2 lb fresh green beans
- 2 tbsp unsalted butter
- salt and pepper to taste
Directions
- Add the green beans to a saucepan and cover with water. Bring to a boil over medium-high heat.
- Cook the beans until just tender, about 5 minutes (this leaves them with a little bite; if you like them more tender, cook a few minutes longer).
- Drain the water from the beans and return the beans to the pot.
- Turn the heat to low and add the butter and salt and pepper to the beans.
- Stir continuously until the beans are coated with the butter and salt and pepper. Cook for an additional 1 minute to enhance all the flavors.
