I like to use 80/20 beef (the fat from the meat gives great flavor and helps to cook the onions), but you can use the ground beef of your choice. I also slice the onions super thinly using a mandoline slicer (if you don’t have one, use a sharp knife to carefully slice the onions).

Skillet Oklahoma Onion Smash Burgers

Ingredients

  • 1 lb ground beef, 80/20
  • 2 tbsp butter
  • 6 hamburger buns
  • salt
  • pepper
  • garlic powder
  • 1/2 sweet onion, thinly sliced
  • American cheese

Directions

  1. Separate the ground beef into 6 equal sections and roll them into a ball. Set aside.
  2. In a large skillet over medium heat, melt the butter. Open the hamburger buns and lay them in the butter until golden and toasted. Remove from the pan (you can place in the oven to keep warm, if desired).
  3. Raise the heat to medium-high and place the burger balls into the pan (you may need to do this in batches depending on how big your pan is).
  4. Smash the burgers down as thin as possible using a burger smasher or a heavy spatula. Sprinkle the meat with salt, pepper, and garlic powder and add a large scoop of the sliced onions on top of each patty. Allow to cook for 2 minutes.
  5. Flip the patties (with the onions) over and season again with salt, pepper, and garlic powder. Allow to cook for a couple more minutes, until the onions are golden.
  6. Add a slice of cheese on top of each patty, allow to melt, and then transfer to a toasted bun. Serve with burger sauces of your choice!
