Summer is in full swing, and here in the South, it’s HOT. I don’t usually feel like cooking when it’s hot, but my family still wants to eat, so by this point in the year I’m looking for simple recipes that don’t take a ton of time. I love to use my grill in the summer, because even though it means standing outside, I’m not heating up the inside of the house, and once I’m down grilling, I get to go enjoy the air conditioning!

This month I’ve got lots of easy meals planned that don’t require you to slave away in the kitchen. For side dishes in the summer, I love salads with garden produce or just a bowl of fresh fruit. Not only is it quick and easy, but nobody wants to eat a heavy meal after a hot summer’s day.
