This was our first week getting our CSA produce pickup. We were blessed with a wealth of spinach, strawberries, turnips and turnip & mustard greens.

I’ll admit, we haven’t really used turnips or their greens much, so consider us adventurous this week… I had to hunt a little for ideas, but I’ve calculated the points on everything.  While I know most of you didn’t get my box, these are all in season produce items so you should find tham at a pretty good price point in your store.

Hi, Jenny. Another way to use greens is in quiche recipes that call for spinach. That's something I do all the time. I use turnip, collard, or mustard greens this way all the time. I cook the turnip greens until tender and then strain and squeeze the excess cooking liquid out of the greens. (Don't throw the liquid out–it's loaded with minerals. I think it is delicious drunk warm as a tea or mixed with a tea. I also sometimes add it to a soup.) Loosen up and separate the wrung-out greens with your fingers, and add them to the quiche in place of spinach.

Love, love, love the new recipes for using the CSA vegetables. I have been a member of a CSA for about a year now. I highly recommend everyone join. Try making traditional latkes with a mix if potatoes and turnips then top it off with a dill sauce. Amazing!
