We are ramping up the fresh fruits and veggies as we hit spring and I’m looking for new ways to sneak them into some of our family favorites. I know there are cookbooks out there with ideas for getting kids to eat more veggies, but let’s be honest, it works for adults too.

      As an adult picky eater I am a big fan of hidden veggies! I grate carrots to add to lasagna or baked spaghetti. I mix grated zucchini into mini meatloaf. And not quite as hidden, but adding a cup of frozen chopped broccoli or frozen peas and carrots to a box of seasoned rice lets them cook in the broth/ seasonings and take on all those good favors so they don’t taste at all like vegetables any more.

      Skinnytaste’s Italian spinach meatballs. I cook them in the crockpot with the sauce and I have yet to have a picky kid turn them down! Love her site for WW recipes!
