I love stone ground corn meal and you can usually find it on sale at Bi-Lo which is why I am including two different recipes for polenta.  Even if you don’t have Bi-Lo in your area, corn meal is one of those really versatile and inexpensive staple ingredients.  Its also filling and satisfying, so you get a lot of bang for your buck! Did I mention that its also great leftover?
