Easy Quiche Recipe

I love any recipe that is versatile. This quick and easy quiche recipe is a great example of a versatile recipe: You can eat it at any meal, you can add whatever veggies you have on hand, and it makes TWO!

Either invite people over and eat them both, or freeze one after it cools, then reheat it and eat it later. Another great idea for this recipe is to take it to a mom with a new baby or a friend who is under the weather. I love to pair it with a side of black beans and rice for a delicious dinner (and maybe make some cookies, too!).

Easy Quiche Recipe

The first step in making these quiches is to stir together eggs, cream or milk, and salt and pepper.

Then you’ll need to set out either two refrigerated/frozen pie crusts that are in a pan already, or roll out two pie crusts into pie pans. Add the veggies and bacon (yum!).

Don’t forget to add a cup of cheese on top of the bacon and veggies, too!

Then just pour the eggs/milk mixture over top and add the rest of the cheese.

You’ll bake it until it’s golden brown and you’ll have to have a lot of self-control not to go ahead and cut yourself a slice.


Easy Quiche Recipe

Ingredients

  • 2 refrigerated pie crust
  • 12 large eggs
  • 1.5 cup heavy cream (or milk will work)
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked bacon, chopped
  • 2 cups cooked broccoli, chopped
  • 3 cups shredded cheese
  • 3 tablespoons sautéed onions

Directions

  1. Preheat oven to 375 degrees
  2. Grab two pre-made pie crusts. If you are using the rolled crusts, unroll and press into a 9" pie plate and crimp the edges so they don't burn.
  3. Split the ingredients in half into two bowls:
  4. In each bowl, whisk together 6 eggs, 3/4 cup cream/milk, 1 tsp salt and 1/4 tsp black pepper. Set aside for a minute.
  5. In both pie crusts, evenly divide and sprinkle bacon, broccoli, onions and 1 cup of cheese.
  6. Pour egg mixture into each pie crust.
  7. Top each quiche with remaining 1/2 cup cheese. If you have extra bacon, throw that on, too!
  8. Bake for 35-40 minutes until the center is completely set and comes out clean with a toothpick.
  9. Cool for 5-10 minutes before slicing.
