This chicken salad recipe features everyone’s favorite weeknight hero: the rotisserie chicken.

Since your grocery store has already done the cooking for you, you’re basically only mixing ingredients together in a bowl to make this. Plus, it’s also one of those recipes that you can kind of create using whatever you have in your house (consider adding raisins or chopped boiled eggs or corn).

We like to eat it on top of a big bowl of greens like romaine or scooped up with tortilla chips.


Frugal Recipe: Easy Chicken Salad

Ingredients

  • 2 cups chopped rotisserie chicken
  • 1/4 cup finely minced onion
  • 2 tbsp chopped pickles (or relish)
  • 1/2 cup chopped grapes
  • 1/4 chopped almonds (or pecans or walnuts)
  • 1/2 cup mayo
  • 1 tbsp mustard
  • 1/8 tsp paprika
  • salt and pepper to taste

Directions

  1. Combine all ingredients in a bowl until everything is even and coated.
  2. Store in an airtight container in the fridge.
