Sure, everyone loves chocolate chip cookies, but let’s not forget another classic: oatmeal raisin cookies.
This recipe for chewy oatmeal raisin cookies makes some super chewy (yet still crisp) cookies. The sugars along with the higher moisture content in the batter makes for a cookie that tastes almost caramel-y.
Ingredients
- 1 stick unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 egg, room temperature
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups oats
- 3/4 cup raisins
Directions
- Preheat the oven to 350 degrees. Line two baking sheets with parchment or a baking mat.
- In a medium bowl, use a mixer to blend the butter and sugars together (on low).
- Add the egg and vanilla and mix (on low) until smooth.
- In a separate bowl, mix together the flour, baking soda, cinnamon, and salt.
- Add the flour mixture to the butter mixture, along with the oats and raisins, and mix (on low) until the batter just comes together.
- Drop (or scoop out) dough by the tablespoon onto the cookie sheets. Bake for 12-14 minutes until the edges are golden brown.
- Allow to cool slightly before transferring to a wire rack.
