I love taco night because it’s a meal everyone in the family loves and that everyone can tailor however they like. One of my kids only puts meat and cheese on their taco shells; another adds every single topping available. Everyone’s happy, and it’s a pretty simple meal to make and to clean up.
For us, the main components of Taco Tuesday are seasoned ground beef and homemade black beans. Sometimes we do chicken instead of beef, but the black beans are a staple.You can eat them as a side or add them to your tacos, or use them as a main part of the taco if someone is vegetarian.
These homemade black beans are so easy to make, and you can add in other vegetables like peppers if you want to spice them up a bit more. They’re also delicious stirred into white rice for a black beans and rice side dish.
Homemade Black Beans for Taco Tuesday
The first step is to heat olive oil in a medium skillet over medium high heat.
Once hot, add garlic and onion and saute for a few minutes (I forgot to add garlic this time—I just added garlic powder later).
Add drained beans, hot sauce, and ¼ cup water.
Savings Tip: One Bag of dried beans is equal to 3 cans of beans. Grab dried beans and soak 1/3 of the bag overnight the night before.
Turn heat to medium-low and simmer until liquid is mostly evaporated, stirring occasionally. Add salt and pepper to taste.
